Apple Cheddar Soup

Give me just about any soup in the winter and I am one happy girl. Add in cheese and it’s even better. 😉 This apple cheese soup is a different twinst on your traditional potato soup a great way to add some variety into our winter meal plans. I love that it uses 2 of my usual winter cold storage items, apples, and potatoes. This soup is pretty rich too so it would also make a good side dish on a cool day.

Apple Cheddar Soup Recipe

What you need:

  • 1/2 cup chopped onion
  • butter to fry onion in
  • 2 large potatoes
  • 1 cup apple juice
  • 1/2 teaspoon salt
  • 1 large apple, chopped
  • 1/2 cup milk
  • 1 cup chicken broth
  • 2 cups water
  • 2 Tablespoons flour or starch
  • 1 cup cheddar cheese, shredded

What to do:

In a large saucepan, fry the chopped onion with the butter until the onion is translucent. Add in the apple juice, chicken broth, and water. Stir in the potatoes and salt. Simmer mixture until potatoes are starting to get soft, add in apples, cook until potatoes are fully cooked.

In a small bowl, mix the milk and flour (or starch) and slowly stir into soup. Cook for another few minutes until the mixture thickens. Add in cheese and stir until cheese is melted. Serve warm, you can add a little more cheese on top or a little sour cream if you like!

This recipe makes enough to serve 4. I didn’t make this particular one in the slow cooker but it could be easily adapted to be made that way.

  1. sounds delish! I am going to adapt it also to make it from emergency food stores using dehydrated potatoes/dried onion/dried apples/powdered milk/chicken bullion/freeze-dried cheese and an apple juice box!

  2. Interesting! Sounds good and very seasonal.
