This easy recipe is one of our very favorites. It requires almost no prep time and is another chance for me to use my Zaycon Chicken Breasts. :) I don't have a "recipe recipe" for this, it's more of a throw together thing!

Cheesy Chicken Breasts

What you need:

  • Chicken Breasts (1 per person)
  • Shredded Cheddar Cheese
  • Mayo
  • Chicken Broth or Water

Place your thawed chicken breasts in a baking dish. Fill the dish with water or chicken broth to cover half of the chicken breasts.

Mix together the shredded cheese and mayo. I really have no measurement for this. Sometimes I make more or less depending on my mood. :D

Cover the chicken breasts with the cheese mixture. Bake at 375F for about 45 minutes or until the internal temp of the chicken is 165F.

Sounds great! I like to take that combination of cheese and mayo and slather it on garlic bread before baking. It’s the Pioneer Woman recipe for cheese bread. Fantastic!

Any ideas of what would work in place of the mayo? Greek yogurt or cream cheese maybe?

Is Zaycon foods coming to our area at all? I see there is nothing currently scheduled for our area, but is that just for the near future or have they ever come here?

They have been here twice so far and the last I heard they are supposed to be coming again in March but I haven’t heard a specific date yet.
