Cheesy Hashbrowns

This is one of our throw together side dishes. We love having it with homemade pancakes or stuffed waffles and a side of beef sausage patties.

We’ve tried shredding up the potatoes with a cheese shredder and that works alright but the hasbrowns tend to stick together in clumps and are a little soggy. So lately we’ve been making it with a chopper (like this one on Amazon Progressive Chopper ). It makes the shreds thicker so they cook better and are more crunchy like we like them. 🙂

Cheesy Hashbrowns

What you need:

  • Potatoes
  • Butter
  • Cheese

Chop or shred up the potatoes. You can do this with the skins on or off, your choice. Add butter to the bottom of a large frying pan and add in the potatoes. Fry until potatoes are done on the inside and slightly crunchy on the outside. Flatten the potatoes on the bottom of the pan and add shredded cheese to the top. Let it melt before serving, serve warm.

  1. sounds great! i happened to throw together scalloped potatoes this weekend using a bunch of stuff i had on hand. can’t beat it.

  2. Never thought of using the Progressive Chopper for potatoes. What a great idea. I’ve got some cabbage I need to shred, also. Used my mandolin last time, but the Progressive might work better.
