Chocolate Dream Cake

So in my head I was thinking I wanted to create a no-bake cheesecake. The recipe that came out of that idea pretty much tastes like cheesecake but it’s almost better. This little cake is so good, between me and the hubby, we finished it off in 2 days. Oh well, that’s what holidays are for right?

Chocolate Dream Cake

What you need:

  • 1 1/2 c. heavy cream
  • 1/2 c. chocolate chips
  • 8oz cream cheese
  • 1/2 t. vanilla
  • graham crackers or Vanilla Wafers
  • 2 T. butter, melted

Just wanted to take a picture of these pretty ingredients. Chocolate + cream. Does it get any better?

Warm the heavy cream in a saucepan. You want it to almost be to the boiling point. Once it gets that warm, remove from heat and stir in the chocolate chips. I used a whisk to not leave any clumps of chocolate. Refrigerate this for several hours or overnight. It will not whip when it’s warm.

Crush up the graham crackers or vanilla wafers. Melt 2 T. of butter and mix with the crushed crackers. I used about a cup of crushed crackers. I’m not a huge fan of crust. If you wanted a bigger crust you could use more. Spread the butter/crumbs mixture in the bottom of a pie plate or a cake pan.

Take the chilled cream and chocolate mixture and whip it until it forms soft peaks.

Whip in the cream cheese and vanilla until well blended. (Don’t you just want to stick your finger in that and have a taste?!) Drop the mixture onto the crust and spread evenly.

You can eat this right away or you can chill it again for a while. If you can wait that long….

  1. Maybe I wasn’t mixing for long enough but I could never get the cream cheese to keep from being in clumps. What did I do wrong?!
