Chunky Cucumber Relish Recipe

My favorite thing about this time of year is all of the fresh produce! Farmer’s markets become like Disney Land for me! All of the colors, fragrances, and textures make me swoon. (Do you get the picture that I’m in love with fresh produce yet?)

One of my favorite things to eat in these hot months are cucumbers. They’re so cool and refreshing, while being incredibly versatile. From salads and even sandwich toppers-there are many ways to eat them! A great recipe to put to use for this time of year is this chunky cucumber relish. It really utilizes the flavors of the season while involving no cooking (which means not having to sweat your tail off-yay!).

Chunky Cucumber Relish Recipe

What You Need:

  • 3 tbs apple cider vinegar
  • 1/4 cup water
  • 1 large cucumbers, cubed (if you are using organic or even ones from your garden, don’t worry about peeling)
  • 1 granny smith apple peeled and cubed
  • 2 tbs honey (this one can be to taste. If you like it sweeter-then definitely add more! I like mine a bit tart!)
  • 1 tbs dill (fresh herbs are the best, but I didn’t have any on hand!)
  • 1 tbs parsley
  • 1/2 teaspoon black pepper
  • 1/4 cup diced red onion
  • 1 tbs minced garlic

Directions:

-Whisk honey and vinegar together until incorporated. (you can warm your honey a bit to make it easier to handle)

-Add water, garlic, and pepper.

-Toss in cucumbers, apples, and onions and gently fold in until evenly coated, then sprinkle in herbs and finish folding all ingredients until everything is completely covered.

-Place in fridge to set for about it hour.

This recipe should last in the fridge for roughly a week, although I don’t think that you’ll allow it to last that long once you taste it! You can pair this relish with so many dishes including salmon. You can even top burgers with it to change up the traditional cole slaw topping. Personally, I can put it on some fresh bread and just gobble it up like that!

The simplicity of this recipe helps you get in and out of the kitchen FAST, so you can go out and enjoy all the goodness of summer!

  2. I have a question. I make refrigerator pickles & I see the resemblance to this recipe. But what I am wondering, can any relish recipe be modified to work this way? I don’t like sweet pickles or relishes, so I am wondering if a dill relish would work this way? Bick’s makes a great one, but a tiny jar (250 ml) is over $2!

    1. I think that it would work the same as refrigerator pickles. I haven’t made them before though so hopefully someone else will chime in!

  4. I really enjoyed this recipe! I sliced up some Roma tomatoes and topped them with a dollop of Cucumber Relish and a thin slice of Mozzarella cheese – I placed them in a metal pie tin and roasted them on the BBQ until the cheese was melted. Scrumptious!
