Easy Roasted Potato Recipe

I love this time of year because my potatoes are finally ready. I don’t think there is anything quite like freshly dug potatoes. They taste so fresh, creamy, and smooth….oh yum! They also make for some very tasty and filling meals and sides.

This recipe is great for using those smaller little potatoes that you are bound to get with your home harvest but you can also use it on larger potatoes too. Depending on the size, you will just have to quarter your potatoes or cut them into 1″ cubes.

Easy Roasted Potato Recipe

What You Need:

  • 3 lbs Potatoes (any kind you have and enjoy!), washed and halved
  • 3 Tablespoons Olive Oil (more may be needed)
  • 1 Tablespoon of Italian season (or dried thyme, oregano and basil)
  • Salt/Pepper to taste
  • 2 Tablespoons Butter, melted
  • 1/3 cup of Parmesan cheese, grated
  • 2 Tablespoons of Chives or Parsley, chopped (optional)

Potatoes (1)

Preheat oven to 400F. On a baking pan, place the potatoes in a single layer and drizzle with the olive oil. Coat all the potatoes and the baking pan. Season with salt and pepper and the Italian seasoning or dry herbs. Toss to coat all the potatoes. Make sure they going into the oven in a single layer or they may stick together.

Bake for about 30 minutes or until they’re golden brown. If you aren’t sure that they are done, give them a little poke with a fork to test.

Remove the potatoes from the oven and stir in melted butter, toss with all the potatoes. Sprinkle the cheese and the chives or parsley and serve immediately. Yum!

  1. I notice you have some purple potatoes! We grew those last year, bit difficult to dig up as they seem to blend in with the soil, which is why we have another full crop growing this year in our beans! I’m looking forward to them cooked as you suggest, we had them mashed last year and my daughter, who is 24 was the reason I tried them! She loved purple mash! Your blog is just wonderful, I’m so glad I found it a couple of years ago! Looking forward to the book!

  2. Sometimes I cheat and spray the pan with olive oil spray, put on the potatoes, give them a spray, too…salt & pepper and into the oven they go. Stick a couple of chicken breasts or thighs or legs along the sides of the cookie sheet and everything is done at the same time. Yum!
