Freezer Breakfast Sandwiches

I’ve been on the hunt for a good grab and go recipe for a healthy breakfast for hubby to take to work. Since the invention of the Sausage Patties a couple of weeks ago, I knew there had to be something yummy I could make him from scratch. And when I say from scratch, these are really from scratch. I used homemade biscuits and my homemade sausage patties. Enjoy!

Freezer Breakfast Sandwiches Recipes

What you need:

Cut up your onion. I used 1 small onion to make 10 sandwiches.

Cook up the sausage patties.

–I use this easy Homemade Sausage Patties Recipe. You could also use this Homemade Turkey Breakfast Sausage or Homemade Chicken Nuggets Recipe to make chicken patty breakfast sandwiches.

Fry up the egg with the onion. I put all the chopped onion in a large frying pan and then scrambled the eggs like I was cooking an omelet. To make it easier to flip (since I used 12 eggs) to cut it into smaller more manageable pieces before I flipped it.

Let everything cool down a bit before you put together the sandwiches. Top half a biscuit (Or make your biscuits smaller than normal like I did here and just use one smaller biscuit for the bottom and one for the top!) with part of the fried egg/onion.

–Looking for something different? Use these Homemade Bread Machine Bagels or English Muffins instead of biscuits.

Top that with a sausage patty and a slice of cheese.

And top that with another biscuit or half a biscuit.

–Sweeten up this breakfast by using small Pancakes in place of the biscuits.

Wrap in wax paper. That way you have something easy to warm it up it instead of making sure you have a plate!

And wrap that in aluminum foil. Place inside a large freezer bag and put them in the freezer. Now you’ve got a grab and go, just needs warmed up, breakfast!

Mmmm, no fake cardboard tasting eggs here, these are farm fresh!

And nothing beats the flavor of homemade grass-fed beef sausage on a fluffy homemade buttermilk biscuit!

For Christmas, hubby bought me the toaster that cooks the eggs, warms up the precooked meat and toasts your bread, English muffin, etc. At first I wasn’t too thrilled about it, but now I love it since my kids are able to make their own breakfasts before school. It takes 4 1/2 minutes per sandwich

  3. Mandy: Microwave. Thats what the wax paper layer is for. No plate is even needed:)

  4. Would you be referring to McDonald’s eggs? The ingredients in those are scary and I say they taste like a flip-flop, chewy and weird.

  7. I think I am going to have to make these for the hubby. He works 2 jobs and 1 of his jobs he works 12 hour shifts he always needs a quick breakfast to warm up and I think this will be just the thing to mix up his routine.

  9. My husband and u are trying to be more frugal. He’s not working-just finishing up his degree(one more semester!!!!) and watching our baby, while I work full time. I JUST finished making these breakfast sandwiches and can’t wait to try them tomorrow!! 🙂

    1. I would thaw them at 30 or 40% for about a minute wrapped in a paper towel. Eggs notoriously do not reheat well in the microwave. You’ll need to split apart the sandwich, splay it apart, if you will, and microwave for about another minute or so (depending upon your microwave). Jimmy Dean makes some freezer sandwiches that we sometimes use on church day. Their instructions are not very accurate. It is my belief that microwaves are not healthy and kill nutrients, so we use it sparingly – something your readers may want to check. These take like 10 min. tops to make for our family of three when I make them on the stove and toast the english muffin.

  11. Whenever I warm bread it works best for me to sprinkle it with water so it will heat and feel like you just baked it.

    Hey Merissa! Thanks for this recipe. I make homemade breakfast biscuits for my hubby to fix in the mornings before he goes to work as well. I make my biscuits by hand, cook breakfast sausage, and I bake my eggs in my 12-muffin tin pan in the oven at 350 degrees for about 15 min. Assemble all my sandwiches and wrap them in press and seal wrap and put inside a zip-lock freezer bag and storage in my freezer. I can usually make 8-10 breakfast sandwiches to last a week.
