Fresh Broccoli Salad Recipe

OK folks! Its summer, which means you need to fire up that grill! My husband has donned his apron and has his BBQ tools in his holster. He is READY! Because we live in the south, we have pretty weather for about eight months out of the year. I could eat chicken on the grill every day. My husband has a secret marinade that packs on the flavor and juicy?! Yes ma’am!

Since my hubby is in charge of the grill, I am tasked with just about everything else for the BBQ. When it is super hot outside, I serve lighter fare, especially salads. The kids love a fresh fruit salad while my husband and I enjoy my Fresh Broccoli Salad Recipe. It is light, refreshing and boy is it tasty! This recipe is one of my most requested when I have people over or we have a pot luck.

What I love about this Fresh Broccoli Salad Recipe is how adaptable it is. If you want to make it vegetarian, just skip the bacon. If you don’t like dried cranberries, toss in some yummy raisins! Don’t care for pecans? Walnuts will add a depth of flavor you would not believe! Just have fun and experiment. It is like getting a new recipe every time!

Fresh Broccoli Salad

What you will need:

  • 4 cups of fresh broccoli florets
  • 1/3 cup bacon bits
  • 1/4 cup dried cranberries
  • 1/4 cup toasted candied pecans (walnuts work well too!)
  • 1/2 cup mayonnaise (Homemade Mayo will work)
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons Dijon mustard

Instructions:

In a large bowl, whisk together the mayonnaise, sugar, lemon juice, apple cider vinegar and Dijon mustard. Set aside. In a large sauce pan, bring water to boil and cook your broccoli until they turn bright green, about 3 minutes. Rinse under cold water and drain. Add broccoli to your dressing and toss. Add pecans and toss again. Refrigerate until ready to serve.

    The only thing is that I used balsamic vinegar as I didn’t have any apple cider vinegar.
