  • Leftovers (Lots of leftovers this week!)
  • Brown Rice Pasta & Tomato Gravy
Suppers:
  • Cucumbers
  • Leftovers
  • Roasted Tomatoes w/ Cheese (Slice tomatoes, place on a baking sheet, drizzle in olive oil and sprinkle with salt, top with shredded mozarella and bake in the oven until the cheese has brown spots. SO good!)
  • Bean and Mexican Rice Bowls
  • Cheesy Chicken + Sweet Tomato Relish
  • Hashbrown Casserole (with homemade sausage)

I have noticed several times under dinner you simply have cucumbers listed. Is that all that is served, or are you preparing them a certain way?

I just like them sliced up as a side for supper or mixed with a little sour cream. We love cucumbers here and sometimes eat them for snacks too!
