We ended up camping last week so I used some of my canned items and easy items for meals. I also ended up being sick for most of the week so nothing fancy was made! Now that the weather is starting to cool off (hopefully!) the vegetable bounty is going down and we have less variety to choose from so my meal plans will start to get a little more "planned".

Breakfasts:

  • Cottage Cheese + Fruits
  • Gluten Free Applesauce Muffins (recipe will be in my NEW cookbook coming next month!!)
Lunches:
  • Leftovers (Yep, that's all. We are leftover people I guess!)
Suppers:
  • Cucumbers
  • Leftovers
  • Sweet Hamburger Tomato Sauce (recipe will be in my NEW cookbook coming next month!!) & Rice
  • Fried Zucchini & Onions
  • Loaded Mashed Potatoes
  • Meatballs Sauteed with Zucchini
Dessert & Snacks:

Love your zucchini brownies… whole family loved them. so moist and easy. i made frosting from the hershey’s cocoa box… omg so good but made a ton… hahahaha thanks for the recipe.

hummus and pitas (both homemade); Hungarian chicken with cabbage, apples and swiss cheese; chili; quiche Lorraine

This week has been a stretch in making the groceries to last, lol! I made a one pound pork roast the yesterday and we had about two ounces left-over. So, not wanting to waste anything I am going to shredd the meat and make homemade pizza. I don’t have any cheese so with dry milk that I have in my pantry, I am going to make my own. I have enough lettuce left-over for a small salad and I will make “lemon-aid” with lemon concentrate and some sugar. Whew! It is amazing what meals you can pull out of very little!

First of all I would like to wish you a good luck with your new book (there is no doubt I am going to read it). Next week we are going to a camping so this post is a good preparation for me. But I have a question, what do you mean when you write “Leftovers”?
