Homemade Buttermilk Pancake and Waffle Mix
We are one of those families that loves having breakfast for supper! I like to keep a nice big jar of this Pancake Mix on hand for when we want to whip of some Stuffed Waffles and Sausage for supper (or the occasional breakfast I suppose!) This recipe makes enough to fill a gallon glass jar. (Which is what I keep mine in!)
Bulk Buttermilk Pancake or Waffle Mix
What you need:
- 2 c. buttermilk powder
- 8 c. flour
- 1/2 c. sugar
- 8 t. baking powder
- 4 t. baking soda
- 2 t. salt
Mix together well and store in a large container.
To make the buttermilk pancakes or waffles you will need:
- 1 egg
- 2 T. oil
- 1 c. water
- 1 1/2 c. Pancake Mix
Whip together all the ingredients with a whisk. A few lumps are normal and won’t affect the final product 🙂 You can use this recipe to make pancakes or waffles!

*Note, if you are unable to find the buttermilk powder you can always add in a small amount of liquid buttermilk later. Just replace half of the water with store-bought or Homemade Buttermilk when you are ready to make a batch of pancakes.

Any idea how to make this without the buttermilk? We have milk allergies in the kids and they can’t eat it at all. Thanks.
You may just be able to leave it out and it would work just fine.
Suggestion, There’s other ‘milk’ substitutes, such as almond, coconut, goat in powder forms. I think you can do that by adding liquid to the mix when you’re ready to cook.

another one that you could use powered eggs too easier for

I’ve stored this easily for many months on the shelf. If you want to extend the life you could put it in the freezer for up to a year.
How many pancakes/servings does the recipe with 1 1/2 c. of mix make?
It makes about 10 medium sized pancakes.

Do you store this in the fridge? The buttermilk powder I found says to refrigerate after opening.
I do not but my buttermilk powder doesn’t say to store it in the fridge, I would if your powder says that though 😉

Yes, this recipe uses all purpose flour and I think buttermilk powder *should* work in the recipe but I have not personally tried it.
