Homemade Vanilla Wafers

I was needing a pie crust the other day for something I was making and a regular butter crust didn’t seem right. I don’t buy regular graham crackers or vanilla wafers anymore and plus it’s not worth a trip to town for just one box of cookies! Turns out it’s really not all that hard to make your own! We used to like to buy a box of vanilla wafers once in a while too for a treat to munch on so now that I can make them myself we will get to treat ourselves more often!

What you need:

  • 1 stick butter, softened
  • 1/4 t. salt
  • 1 c. sugar
  • 1 eggwhite
  • 2 T vanilla
  • 1 T. milk
  • 1 1/3 c. flour
  • 3/4 t. baking powder

With a mixer, whip the butter, salt, sugar, and eggwhite.

Add in the vanilla, milk, flour, baking powder, and mix well.

You can either use a small cookie scoop or stick the dough in a freezer bag.

Drop onto a cookie sheet in small amounts. Bake at 350F for 15-20 minutes. The cookies will harden more as they cool so don’t worry about getting them hard in the oven.

These can be used just for munching or for crust!

  1. Just wondering, does this kind of stuff freeze so that I could make a couple of batches, separate it out, and store it for a day when the grand kids are going to come over?
