I was more than pleased to be asked to do a review for Jovial products, including the 100% Organic Einkorn products. I had seen them in my Azure Standard catalog as something new they were carrying and really wanted to see what they were like.
I received a package with 3 of the newest products that Jovial carries: Einkorn Wheat Berries, Einkorn Flour, and Enkorn Pasta.
If you haven't heard of Einkorn Wheat before, you must pay attention. It is a ancient grain that has never been hybridized. You can substitute this grain in any of your favorite recipes using wheat. It is a tasty, slightly nutty, but golden colored with a buttery, rich flavor. Our family found this grain to be delicious!
We used the wheat berries to grind into a nice, buttery colored flour. It turned out perfect in my favorite whole wheat bun recipe. The dough was smooth and very easy to work with. It reminded me of a sweet dough with milk and butter, even though I did not add either of those to my dough. I told the family that we were testing some new flour in the buns we were having. They thought they were wonderful and didn't think they were 100% whole grain. They came out fluffy and airy, with a wonderfully yellow coloring. Jovial says that the golden color is rich with the antioxidant, lutein.
The pasta that we tried was also a big hit. It was not heavy, as other 100% wheat pasta can tend to be. It was slightly nutty, a light buttery taste and the texture of it was great.
I would encourage you to give the Jovial line of flours and pasta a try. It is a wonderful, tasty change and knowing that it is nutritious and healthy for you and your family is a huge, big plus.

What about the gluten content in this grain? I am trying to reduce the amount of gluten I eat by 95%. This sounds awesome!
I’m not sure of the exact content amount but Einkhorn is NOT a gluten free grain.

I haven’t used Einkhorn flour before, I’ve never heard of it, but it sounds good, and that you can grind the grain yourself. (I’ve always wanted a flour mill anyway!) I like the description of a slightly nutty flavor! Anyway, it sounds great!
I did a big experiment with different wheat berries yesterday because I’m looking for a place to purchase some decent berries. I had some interesting results with something called a “pastry blend,” but I haven’t tried these berries yet…

I’ve used einkorn flour once to make some scones. Yummy! I is a nice finely ground, lovely colored flour and the texture of the finished product was soft and fluffy. Can’t wait to try more! We haven’t tried the pasta yet, bet it’s great!
