Melt in Your Mouth Mini Muffins

I love all things mini! And mini muffins are just so much fun to make! These little 2 bite muffins are perfect for a little add on to your breakfast or a quick snack. They will also freeze well in case you want to make them ahead of time.

Melt in Your Mouth Mini Muffins

What you need:

  • 1/3 c. softened butter
  • 1/2 c. sugar
  • 1 egg
  • 1 1/2 c. flour
  • 1 t. baking powder
  • 1/2 t. salt
  • 1/2 c. milk
  • extra melted butter and sugar

Mix together all the ingredients. Make sure everything is mixed well.

Drop by teaspoon full into a greased mini muffin sheet. Bake at 350F for about 10 – 15 minutes or until they are slightly brown and a toothpick comes out clean. This is the Mini Muffin Pan that I have and purchased from Amazon. I’ve tried the silicone muffin pans but I always have trouble with the muffins sticking and have had several of the pans melt.

Let them cool just a bit. Then melt a little butter and dip the tops of the mini muffins in it. Then dip in sugar. You can use white, raw, or a mixture of white and brown sugars. I used raw sugar in these pictures.

Ingredients

How to Freeze Mini Muffins

If you really want to, you can stick the mini muffins on a baking tray and freeze individually. Then put them in a freezer bag. However, they won’t stick together if you don’t do this step and just put them directly in a freezer bag. Just be sure that the muffins are completely cooled before freezing and you won’t have any excess buildup of ice crystals. We like to double this recipe and put half of it in the freezer for quick snacks for later.

  3. I have the same recipe, but it calls for 1/4 tap nutmeg in the batter and cinnamon sugar for the finish (and butter of course). One of our favorites! Anyway, a variation!
