Oven Baked Potatoes

Potatoes are the perfect addition to any meal, at least in my opinion. They are so comforting and delicious.  This roasted potatoes side dish is no exception. It is super easy to make and you can easily adapt the flavor to your family’s preferences by adding various spices based on your tastes. One flavor we like it to add to them is dried onion or garlic, just for a little something different. But honestly, I like them the best just plain with a little salt and a nice dollop of sour cream.

Olive Oil Oven Baked Potatoes Recipe

What You Need:

  • Extra Virgin Olive Oil
  • Potatoes
  • Salt

How to Make:

Wash up your potatoes first! You can use any variety of potato you would like for this recipe or a combination of a few different ones to change it up. Gold, and purple potatoes would make a fun combination the kids would love!

Peel and slice up the potatoes into cubes or pieces, place them into a bowl. (If you’re using smaller potatoes, with softer skin you can leave the skin on if you prefer,)

Pour some olive oil on the potatoes and sprinkle them with salt. Stir the potatoes around in the bowl so everything gets coated lightly.

Put the potatoes into a bar pan or some kind of cookie sheet with sides, bake at 400 degrees until the potatoes are soft. You will want to flip them or stir them around half way through baking. (These generally take about 30-40 minutes to bake depending on how many you are making at once.)

Yum! Like I said above, we enjoy eating these with a little bit of sour cream!

  1. I have garlic-cilantro infused EVOO and some yellow potatoes that needs to be used. Going to through them in the oven in about an hour 🙂

  2. We do this a lot, except I use foil and make packets. I add onion sometimes, also have made the packets with carrots included as well. And soooo easy to clean up 🙂

  3. Have made these a couple of times since the original post and the family LOVES these potatoes. Easy to fix and you know what’s in it!

  4. I use whatever is in season: squash, onions (always), potatoes, sweet potatoes, asparagus, zuchinni or carrots. I have put seasoned salt on it also and rosemary. This is a great weight watchers side dish!
