So yesterday was day 2 of our 2 week challenge. For supper last night we made cheese stuffed hamburgers and oreo cookie salad. I thought I'd share a few yummy recipes with oreos. They seem to be one of those things that I can almost always have on hand by buying them from a surplus store. I buy them for around $1 a package but if you can't find them there I think Target has the cheapest ones(that still taste good: ) ) for 1.99.
Oreo Cookie Salad
1 sm. pk. vanilla pudding(you can make your own version of this also)
2 c. milk(I did have any so I used powdered and it turned out fine)
Mix milk and pudding mix together and let sit til it become thick.
1 pk. oreos made into chunks
1 1/2c. marshmellows
8 oz. whipped cream(I make my own whipped cream from whipping cream, sugar, and vanilla.)
Mix all ingred. together. Tip: do not add oreos until ready to serve.
Vanilla Pudding Mix
1 1/2c. dry milk
1/2 c. sugar
3/4 c. powdered sugar
1 c. cornstarch
1/2 t. salt
2 t. vanilla powder
Combine all and store in a tight container. (for recipe above use 1/2 of mix to equal one small package) When ready to use cook on stove top with milk until mixture boils. Boil for 1 minute. Remove from heat and add 1/4 t. of vanilla. Chill until thick.
This next oreo recipe is amazing if you've never had it before. People who try them think they are so much more complicated than they really are. Enjoy!
1 pk. oreos
8 oz. cream cheese
melting chocolate(squares or chips)
Crush oreos well and mix in softened cream cheese. Form into balls and place on a wax paper covered cooking sheet. Melt chocolate(always works better if you add a little oil or shortening to it when melting) and drizzle on top. Chill in refrid. or freezer until semi hardened and then store in a container in the fridge.
