Ranch Chicken Calzones

This is a nice simple meal to make ahead if you have pizza dough on hand, which I almost always do in the freezer. The nice little pockets bake easily and freeze well so they can be used for future meals. Just reheat in the oven or microwave and you are set to go!

Ranch Chicken Calzones

What you need:

  • 2 1/2 c. cooked chicken
  • 1 c. mozzarella cheese
  • 1 t. garlic powder
  • 1/2 c. ranch dressing (store bought or recipe as follows)
  • pizza dough

Mix together the chopped, cooked chicken, cheese, garlic, and ranch dressing. Press into pockets that you make from the rolled out pizza dough. I used the pocket maker I got from Pampered Chef for my birthday and it worked great! Bake at 450F for 15 minutes or until nice and brown. Place in a freezer bag once they’ve cooled a bit and freeze until ready to use.

 

If you don’t have ranch dressing on hand you can make it!

Homemade Ranch Dressing

What you need:

  • 1 c. mayo
  • 1/2 c. sour cream
  • 1/4 t. garlic powder
  • 1/4 t. onion powder
  • 1/8 t. salt
  • 1 t. ranch dressing seasoning

  2. This recipe looks DELICIOUS… I am wondering if you can use a bought pizza dough? I think Pillsbury (sp?) has a rolled pizza dough that I can buy, would that work for this recipe. Can you tell me how you make the pockets with out the pamper chef tool?

    1. Yes you could use store bought pizza dough, the cooking time might be slightly different though. And without the little tool just cut them into a circle (or any shape really!) and press the edges together with a fork.

  3. Hi, I was just wonder how you heat them back up? I would imagine heating them in the oven or toaster oven would be better than using the microwave but I stink at figuring out temps and times lol

  4. I really enjoy your posts! I found the recipe below for making ranch dressing from scratch. It tastes very similar to Hidden Valley and most people have all the ingredients in their cupboard!

    Ranch:
    5 tablespoons dried minced onions
    7 teaspoons parsley flakes
    4 teaspoons salt
    1 teaspoon garlic powder

    Mix together and store in an air tight container.

    For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.

    For dip: Mix 2 tablespoons dry mix with 2 cups sour cream.
    Mix up a few hours before serving, so the flavors all blend.

  5. Love this recipe! I’ve been on the search for make ahead meals for my family to have. My fiancee stays home with our three children ages 12, 10 and 3 1/2. They’re all homeschooled and I work many long nights as a nurse so make ahead meals are a must. I have leftover bbq pork that I think would be a huge hit as a filling as well!

      1. Thank you Merissa! I made some pizzas with toppings made from what I already had in the house. We made Tricolour with Four Cheeses and Dandelion Spinach Pesto, and a BBQ version. Thanks for the inspiration to make some up for the freezer!

  7. I love this idea and as I read it, I am wondering if you could add a small amount of bacon to make Chicken Bacon Ranch? Any suggestions on preparing this to bake?
