Easy Cheese and Bacon Quiche
Looking for a great breakfast that you can make the night before? I’ve recently discovered how easy it is to make a quiche! I know, I know, I’m a little late to the party, but my life just tends to move a bit slower. 😉
This is a very easy Cheese Quiche recipe that is a great, high-protein breakfast. You can make it the night before, and it will be ready to pull out for breakfast in the morning. For this recipe, you can use a pre-bought crust for ease if you can find a good one, or you can simply use your own homemade version. Either way, you’ve got a great little breakfast or brunch that only takes about 5 minutes of hands-on time.

Ingredients in Cheese and Bacon Quiche
- 1 pie crust (You can use Homemade Pie Crust!)
- 1 cup diced ham (Leave this out or use another type of smoked meat if you have something on hand.)
- 4 slices bacon, chopped
- 1 cup cheddar cheese, shredded
- 1 tablespoon all-purpose flour
- 3 eggs
- 1 cup milk
- Black pepper
Step by Step Instructions for Making Bacon Quiche
In a bowl, whisk together the eggs, milk, and black pepper. You can add as much or as little pepper as you want, depending on your tastes.
In another bowl, toss the cheese and flour together.
Place the ham (if you are using it), and bacon in the bottom of the pie crust. Top with the cheese/flour mixture.
Pour the egg mixture over the top slowly so that it has time to sink in. Place the pie on a cookie sheet (just in case it overflows in the oven!) and bake at 350 degrees for 45 to 55 minutes.
The middle of the quiche should no longer be jiggly when it’s done baking. Remove from the oven and let it cool for at least 20 minutes before serving so it can finish setting up.
If you aren’t ready to eat the quiche right away, cover the dish and set it in the fridge until ready to serve. It will last for a couple of days in the fridge.

I’ve been looking at quiche recipes this afternoon, so I’m glad I found this. I forget where I read it, but one tip was to sprinkle the cheese onto the pie crust first. He said that thin barrier would help to keep the pie crust from getting soggy! But that is the only change I will make to your recipe. (Well, other than the fact that EVERYTHING I make starts with onions. 😉) Thanks for posting this.
