Slow Cooker Breakfast Recipes

I am a firm believer that breakfast is the most important meal of the day. The problem is, I rarely have time to make it. Between hitting my snooze button 8 times, getting myself ready for work and my daughter ready for preschool, I can barely make it out the door without being late for work. The last thing I have time for is breakfast.

But as I mentioned, I love breakfast, so this week I decided to do a little evening prep work so that breakfast was hot and ready for me when I woke up. I decided to create some slow cooker breakfast recipes! It was actually incredibly simple. After my daughter was in bed, I would spend 5 to 15 minutes prepping breakfast, then I would toss everything in the slow cooker, turn it on low, and forget it. When I woke up in the morning, I was welcomed with the wonderfully fragrant smell of breakfast waiting for me.

I have experimented with a few recipes, but here are my three favorite overnight crockpot breakfast recipes that I have made.

Slowcooker Oatmeal Recipe

Apple Cinnamon Oatmeal 

(Serves 4 – 6 people)

Ingredients: 

  • 4 tbsp butter
  • 2 – 4 apples, peeled and diced
  • 3/4 cup brown sugar
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 2 cups old fashioned oats
  • 4 cups water

Using cooking spray or butter, grease the sides of the slow cooker so the oatmeal won’t stick. Cut 4 tbsp of butter into small pieces and lay them out on the bottom of the slow cooker.

In a medium bowl, combine diced apples, brown sugar, cinnamon, salt and nutmeg, and stir to combine. Spoon apples on top of butter. Sprinkle oats on top of the apples and then pour the water over the oats.

Don’t stir the mix. Turn the slow cooker on low and cook for 9 – 11 hours.

Apple Cinnamon Oatmeal Recipe

Ingredients

  • 4 tbsp butter

  • 3/4 cup brown sugar
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 2 cups old fashioned oats
  • 4 cups water

Instructions

Slow Cooker Breakfast Casserole

Ingredients:

  • 1 pound breakfast sausage
  • 12 eggs
  • 1 cup of whole milk
  • 6 russet potatoes, peeled and shredded with a cheese grater (or use pre-made hash browns)
  • 2 cups of cheese, shredded
  • salt and pepper to taste

Brown sausage in a pan, over medium heat, until cooked through. Set aside.

In a large bowl, combine eggs and milk and beat until well mixed. Add in sausage, potatoes, cheese, salt, and pepper. Stir to combine.

Transfer mixture into a slow cooker and cook on low for 8 hours.

Ingredients

  • 1 pound breakfast sausage

  • 1 cup of whole milk

Creamy Overnight French Toast

Ingredients: 

  • 6 eggs
  • 1.5 cups milk
  • 1/2 cup plain yogurt
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon, divided
  • 12 slices of bread, cut into bite-sized pieces
  • 1/4 cup butter
  • 1/2 cup brown sugar

In a large bowl, combine eggs, milk, yogurt, vanilla, and 1 tsp of cinnamon. Whisk until well mixed. Submerge bread into the egg mixture, allowing the bread to soak up the liquid. Cover and let soak for 4 hours in the refrigerator.

Spray the inside of the slow cooker, then pour in the bread mixture.

In a small bowl, combine butter, brown sugar and remaining 1 tsp of cinnamon. Crumble the butter mixture over the top of the bread, then cook on low for 4 hours (or 2 hours on high).

Creamy Overnight French Toast Recipe

Ingredients

  • 6 eggs
  • 1.5 cups milk
  • 1/2 cup plain yogurt
  • 1 tsp vanilla extract

  • 1/4 cup butter
  • 1/2 cup brown sugar

Instructions

  1. I’m confused about how to make the french toast one for breakfast if it only goes in the slow cooker for 4 hours. I am not getting up at 4 AM to put it in so it will be ready for breakfast. LOL Other than that, I might have to try a couple of these. The hash brown one sounds great. 🙂
