My hubby told me yesterday that if I'm going to be telling you about my budgeted shopping trips for the month I should also tell you how we are using the food that I'm getting on the budget. He suggested that I do a daily post with our meals for the day. I said I'll try it because mainly it will help me stay accountable for making food at home everyday, and making decent meals, and hopefully helping with our varitey of foods we are eating. Now keep in mind I have a fairly decent stockpile of freezer and pantry foods plus a garden so my costs are already lower because of that. (if you watched my
stockpile video you know what I'm taking about) I hope these posts benefit you in some way. Maybe you can get some new meal ideas and some new recipes!
Anyways, here is our meals from Day 1, Sunday August 15th.
Breakfast:
Egg, Onion, and Pepper Breakfast Burrito
Eggs I had left from last week, onion and banana peppers were from the garden. Tortillas were from our recent trip to New Mexico!
Lunch:
We kind of snacked in the afternoon so we didn't really have lunch. I think I ate a granola bar from one of my
recent Safeway trips!
Supper:
Baked Chicken Breasts with Cheese
Cucumber in sour cream
Fried yellow squash
Strawberry Sparkling Drink
The squash and cucumber were fresh from the garden. The sour cream was something I bought for this week during
THIS trip. The chicken and cheese came from the freezer, both from previous great sales at Family Thrift Center. Oh and the drink was from Robb's, I found it for under $1.
Cheesy Baked Chicken Recipe
What you need:
Chicken Breasts
Shredded Cheddar Cheese
Mayo
Chicken Broth
Mix together cheese and mayo, make a nice thick mixture. Put chicken breasts in a 9x13 or similar pan and add enough chicken broth to come about 1/2 way up the chicken. Coat the top of the chicken with the cheese/mayo mix. Bake at 400F for about 45 minutes or until chicken is no longer pink.

How much mayo and cheese .
I don’t really measure it out but it’s about equal amounts of both, 1:1 ratio.
