Pizza Roll Ups Recipe: Totally From Scratch

This is the time of year when I like to have some easy, go-to meals to put in the freezer for quick lunches or suppers with no hassle. This Pizza Roll Ups recipe is one of our favorite recipes to stock up in our freezer.

Pizza Roll Ups Freezer Meal

These pizza roll-ups come together quickly and are great to have on hand in the freezer for a quick and easy meal that the whole family will love.

If you are looking for a quick lunch for during the school year or just something that you can have on hand for busy evenings when you don’t get home until later, Pizza Roll-Ups are always a favorite with the kids, and they re-heat very well after being frozen.

How to Make Pizza Roll-Ups Step By Step

First, You will need to prepare a recipe or two for a basic bread dough. You can use your favorite recipe for this! I don’t use crescent dough like some recipes do because it’s expensive, hard to find, and has a bunch of “interesting” ingredients.

I like to grind my flour fresh and make whole wheat dough for my pizza crust. This recipe for my basic, whole wheat dough is our favorite. If you’re in a hurry, this recipe for 30 minute pizza also works great!

Once your dough is made, you will need to roll out your dough with a rolling pin to make a large rectangle shape. Think about making cinnamon rolls! You will want approximately the same size and shape.

Once your dough is rolled out, spread your favorite toppings to cover the surface and sprinkle with some cheese. I usually use turkey pepperoni and shredded, raw cheddar cheese.

You can add in anything you wish; remember not to get them too overloaded; they won’t stay together as well with a lot of filling.

I also used a small amount of sausage I had left over that was already browned and ready to use. Then, I sprinkled a small amount of my pizza seasoning over the entire surface.

Once you get the ingredients all spread out over your dough; you will begin to roll it up in a tighter cylinder form.

Continue rolling until you come to the other side of your rectangular dough, and pinch the dough together to form a seal. You can also fold in the ends so the filling doesn’t come out.

You will then cut your roll into slices. I usually cut mine about 1 – 1 1/2 inches wide. Cut the complete roll.

Place the rolls on a greased or covered cookie sheet or baking sheet on their sides (as shown). They are ready to bake…you don’t have to allow any time for rising.

Bake the rolls in a 350-degree oven for approximately 25 minutes or until cheese and dough is golden brown on top. Let them cool and enjoy!

Freezing Pizza Roll-Ups

These are great right from the oven or re-heated later. They are also ready to put in Ziploc freezer bags or an airtight container and store in the freezer for a later meal, appetizers, or snacks.

The Pizza Roll-Ups freeze wonderfully, and you can reheat to eat right from the freezer. Just remove and place in the refrigerator before reheating in the oven or microwave.

If you like sauce, you can dip them in pizza sauce as you eat them. Half of my family enjoys them plain, while the other half likes to dip in my homemade pizza sauce.

You could also dip them in Marinara Sauce.

Ingredients

  • Your favorite Pizza Dough
  • Your choice of toppings
  • Shredded Cheese
  • Pizza Seasoning (or Italian Seasoning)

Instructions

  1. Prepare a recipe or two of your favorite bread dough (like this 30 minute pizza dough).

  2. Roll out your dough into a large rectangular shape.
  3. Spread your favorite toppings to cover the surface and sprinkle with some cheese. Remember not to get your toppings too overloaded or your pizza rolls won't stay together as well.

  4. Sprinkle a small amount of pizza seasoning (or italian seasoning) over the entire surface.

  5. Begin to roll up your pizza dough in a tight, cylinder form. Continue rolling until you come to the other side of your rectangular dough and pinch the dough together to form a seal. You can also fold in the ends, so the filling doesn’t come out.
  6. Cut your roll into slices about 1 – 1 1/2 inches wide and place the sliced rolls on a greased or covered cookie sheet on their sides. .
  7. Bake the rolls in a 350 degree oven for approximately 25 minutes or until cheese and dough is golden brown on top. Let cool and enjoy!

Recipe Notes

These are great enjoyed right from the oven or re-heated later.  They freeze wonderfully too. Put them in ziploc freezer bags once cooled and they can be easily re-heated to eat at a later meal.

If you like sauce,  you may enjoy them  served alongside my homemade pizza sauce to be dipped in.

Pizza Pockets Recipe

I also wanted to include this recipe for Pizza Pockets on this post, as it uses all of the same ingredients as the Pizza Roll Ups, just in a different form.

Again, start with your favorite Pizza Dough Recipe:

 Cut the dough into smaller, bun-size portions instead of leaving it together as you did with the Pizza Roll-Ups.

You can find these awesome bite-size pepperonis at the store; otherwise, chop your favorite pepperoni into smaller pieces.

Roll each of the pieces of dough out or pat them out into a smaller circle size. This is what I did. Then, add in a small amount of pepperoni and a small amount of shredded mozzarella cheese.

Fold the sides to encapsulate the goodies inside and press the seam shut.

Place, seam side down, in a muffin pan.

I baked these for approximately 15-20 minutes at 350 degrees. You do not need to let them rise at all.

They come out of the oven a bit gooey…but that’s ok. Pop them out of the pan and let them cool before you put them away. Place several in a freezer bag and freeze them. They are easy to take out, just one or several. Warm them up to serve.

How to Make This Recipe With What You Already Have

You don’t need to use the same toppings for your “pizza” as we did here, use anything that you have to keep it frugal without having to go to the grocery store. More yummy toppings are onions, bacon, ham, parmesan cheese, black olives, bell peppers, mushrooms, and sun-dried tomatoes.

You might be tempted to use a store-bought pizza dough (which is totally fine if time is an issue!). To keep it frugal, make your own pizza dough from scratch. This Make Ahead Pizza Dough works great if you like to have it on hand in the freezer.

If you don’t have Italian seasoning, you can just sprinkle a little bit of dried basil, oregano, and parsley over the top of the crust.

What goes with pizza roll ups?

If you have enough things in the filling, you could call Pizza Roll Ups a whole meal on their own! If you want an addition to your meal, a good green salad would be a nice side.

What sauces are good with pizza bites?

You can use Marinara Sauce, Pizza Sauce, or even a Queso Dip for your dipping sauces to go with the rolls or bites.

Are pizza rolls healthy for you?

This is going to depend on your filling and your dough. Use vegetable fillings (bell pepper, mushrooms, etc) and a whole wheat dough for the healthiest Pizza Roll Ups.

  1. Merissa, This recipe looks awesome. It would be something my husband would take to work with him. He only takes things he can eat while driving. I did go to the basic dough recipe and see that it calls for lecithin. I know that lecithin is good for you (really good for you), but wonder if it is essential to the dough. Does it add to the quality of the bread? Can you taste it?

  2. Hi Noreen….Merissa’s mom here…since I wrote the post and make these pizza roll ups regularly. The lecithin doesn’t add any additional taste to it. Lecithin is a binder, so it just helps everything to work together to make a nice, soft, easy to work with dough. If you use a “dough enhancer” of any type, this could be in place of the lecithin. If you don’t have it, you can leave it out. If you need another recipe for a basic dough, I have another good one that I can share. It is a very soft dough, using milk, as one of the ingredients. I have used it several times, also, and it makes a nice, easy to work with dough, without any extra ingredients that you might not have. Let me know and I can put together a post for that, if you would like.

    1. Ok. I love learning and I am learning now! What are other dough enhancers? I regularly add gluten to my bread dough. Does that count?
      I would love to have another recipe for basic dough. I am finally able to be home and love bread baking, and my chickens, and my garden…need I go on? Thanks to both you and Melissa for this website. It is packed with great stuff.

  5. Great idea! We have found pre-made dough at the supermarket in the deli case. When I don’t have time to make the wheat dough, I can fall back on the premade dough. This recipe is a wonderful idea. I am a big fan of make ahead and freeze for later meals!!! Thanks for sharing.

  8. I usually have 2 to 3 bread machines going at the same time just making dough!!! Now I can make dinner rolls, a loaf of bread and some pizza rolls all at once… Since 3 back surgeries I don’t have the oomph! to knead the dough so let the machine do it for me…I STILL MAKE THE BREADS homemade… ha ha ha… Thanks for the great recipe!
