I’m all about making muffins! All kinds and flavors, you name it, we probably have tried it. Some of our favorites are:

We make all kinds of treats with Zucchini, so why not make some yummy muffins with it? If your family isn’t the biggest fan of zucchini, baked goods are always a good way to hide it.

Our children love muffins…seriously. The 3 of them can eat an entire dozen for breakfast in one morning. I’m always looking for ways to put more fruits and veggies into their diet so when I was trying to think of a great way to add zucchini to this favorite food of theirs, this is what I came up with. I hope you enjoy it, these are so good!

Best Zucchini Muffin Recipe

Easy zucchini muffins with chocolate chips.

Ingredients

  • 1 1/2 cups flour can be gluten free flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 cup shredded zucchini
  • 2 eggs
  • 1/2 cup applesauce
  • 1/4 cup milk (or milk alternative)
  • chocolate chips optional

Instructions

  1. Mix the dry ingredients together and then add in the wet ingredients. Stir well until everything is incorporated and you don't have any stray lumps.
  2. Bake at 350 F for about 20 minutes or until a toothpick comes out clean.

Recipe Notes

You might have to bake them a little longer, be sure and do the toothpick test.

Make sure to add less sugar is your applesauce is sweetened.

Tips for Baking Homemade Zucchini Muffins

You can always use homemade applesauce, but just remember, if you add sugar to your homemade applesauce, add less sugar in the muffin recipe.

These muffins should be perfectly baked when the tops are just brown.

It may be possible to make this muffin recipe sugar-free by replacing all of the sugar with 1/3-1/2 cup of honey. If you decide to do this, you may need to lessen the amount of applesauce or milk in the recipe to avoid gooey muffins.

Gluten-Free Zucchini Muffins Recipe

This recipe is incredibly easy to make gluten-free! Just replace the regular white flour with All Purpose Gluten Free Flour instead. I’ve made them both ways, and they come out perfectly. You may need to bake the gluten-free muffins slightly longer.

Since these have fruit and veggies in them, they make a great breakfast when warmed up a bit and slathered with some butter. Otherwise, they also make a nice grab-and-go snack! You can also freeze these for later. I didn’t think we’d eat up the whole batch fast enough, so I froze half of the zucchini muffin recipe (after I baked them), and they came out of the freezer great!

  1. I love anything with zucchini. I noticed these have no eggs and a lot of powder/soda. Is that correct? Just want to make sure an egg is not necessary. I was thinking of adding cinnamon and vanilla, too.

  8. Have you tried these or any of your other zucchini baking recipes as a gluten free version? If so I would love to know how they turned out! We are gluten free, egg free, dairy free right now during an allergy elimination diet. We are used to being dairy free but the rest is new to me. It’s been quite the challenge to find baking & snacks that work!!

  10. We have 25 cups of shredded zucchini in the freezer and about 10 cups of homemade applesauce leftover from last fall, so I made these today. I’m gluten free, so I used my GF flour blend, which is similar to yours. Seeing as there are no eggs in this recipe and very little fat, I felt like a gluten free batter could benefit from some protein and fat. So I subbed a few ounces of the GF flour blend for almond flour. I also added a teaspoon each of vanilla and cinnamon. They turned out soooooo good. I ate one tonight and am freezing the rest to have for breakfast.

  11. I just wanted you to know, I have made this recipe 4 or 5 times now. I add cinnamon and vanilla, they are SO good and so easy to make! I just made a batch with G/F flour, we’ll see how that goes. 😉

  12. Hi! I was wondering the serving size for these. How much did you deposit into each muffin tin? I’ve made these many times, and they are so good, but I never have the measurements right. Would you suggest 1 tbsp per muffin? Another size? Thank you!

  13. I love, love, love zucchini. My kids, however, not so much… I love them but they do not love zucchini. Oh dear, that could have been misinterpreted incorrectly. Anyway, I’m sure if I put zucchini in muffins they’ll change their tune, I hope. 🙂

  19. I made these today as I had some leftover zucchini to use up before it went bad. I only had one cup and a quarter of flour, so I added a quarter cup of corn flour I had for corn muffins. Also, I cooked them for 22 minutes. Anyway, these came out amazing! I made them for the guys working in my yard today, but stole one before serving them and loved them. Kinda glad I gave them away as I would have eaten them all pretty quickly, lol. Thanks for the amazing recipe.
