Springtime means that fresh spring veggies are finally in season and ready for all of us to enjoy (at the best prices they will be all year!). Asparagus is a favorite around our home for and appetizer or a side dish. I will get it from the store when I find it on sale. I also love to find it growing wild in the ditches!

One of the best parts about cooking fresh asparagus spears is that you don’t need much prep time for any dish you are going to make with it. My very favorite way to make it is to make roasted asparagus. I drizzle it with a bit of extra virgin olive oil, grill it until it’s bright green, and serve it with a little salt. So tasty!

Asparagus can be one of the more tricky vegetables to cook with, not because of its flavor but because of the odd shape and texture of the asparagus spears. Asparagus is a healthy vegetable that’s full of fiber and high in vitamins C and E. It’s a great source of folate and one of the best natural sources of Vitamin K. The fiber it contains can help with gut health as well as help to keep you feeling full so you don’t turn to as many carbohydrates.

When Are Asparagus Bad?

It’s pretty easy to know when some asparagus spears have gone bad. They will become slimy and soft and not hold their firm texture anymore. At that point, it’s time to feed them to your chickens or add them to your garden compost.

Keeping Asparagus in the fridge in water or in one of these Produce Keepers will be the best way to make it last as long as possible.

  4. My go to recipe when the first asparagus comes out is creamed on toast.
    Love it for breakfast, lunch or supper.

    1. I grew up with that dish every spring, but mom add chopped boiled egg to the cream sauce…Creamed eggs on top of asparagus….so delicious!! Tastes a lot better than it sounds.
