Healthy Muffin Recipes

I love a good muffin for breakfast in the winter! They are so easy to make and they can be enjoyed by themselves or alongside a yummy smoothie or warm drink like coffee, tea or hot chocolate.

—Keep some of this yummy Homemade Cappuccino Mix on hand so you can enjoy a cup with your morning muffin on cold days.

Muffins are also very easy to freeze! While you have all the ingredients out to make one a batch, you can easily make a second batch by doubling the recipe so that you can put half of them in the freezer.

Freezing Muffins

The easiest way to freeze muffins for later is to pre-bake them first. Have them totally finished and let them cool. Then, place in a zippered freezer bag (or a nice stackable container for the freezer if you have one!) and label them with the date that you made them. When you are ready to eat them, just remove the bag from the freezer a day in advance and let the muffins thaw in your fridge. They should be good to go by the next morning and you have breakfast already prepared!

  1. What a great roundup – the Savory Breakfast Muffins look yummy! I love to bake several batches of muffins and freeze them. Then I can quickly pop them into lunchboxes, take them on the road for snacks, and of course eat them for breakfast.

    Okay, healthy muffins has to be an oxymoron – correct? You mean to tell me that my chocolate chip muffins aren’t healthy? Just kidding 🙂

    I recently tried Zucchini Muffins for the first time. I was really surprised to see my kids enjoying them -especially since they are not zucchini fans!

  16. Don’t suppose you have a version for the “french toast muffins” that Costco sells, very occasionally – I’ve been hunting for one, but not much luck so far. I would really like to be able to make them smaller, and maybe be able to have them more than one month out of a year (they so rarely have them). I plan to try a few of these.
