Gluten Free Raspberry Bars

•  All purpose gluten free flour •  Sugar •  Butter or shortening •  Eggs •  Raspberry jam •  Mini chocolate chips

Start by mixing the gluten, sugar, shortening or butter, and 2 of the eggs together in a large bowl.

Remove 1 1/2 to 2 cups of the crumbly mixture and set it aside to use for a crumble topping later. Add the 3rd egg into the mixture that will become your base crust.

Line a 9×13 baking dish with parchment paper (or grease it well). Pat the crust mixture into the pan. Bake this crust for 5 minutes at 350 degrees F.

Remove the crust from the oven and spread the raspberry preserves over the top in an even layer.
