Banana Bread Mini Muffins Recipe

Are you ever in the mood for a little banana treat? We love to make a lovely loaf of Banana Bread here (or Gluten Free Banana Bread), but right now, I’m on a “freezer snacks” kick so I wanted to make something a little different.

These little mini muffins taste just like the Banana Bread you know and love, but they are in a mini take-along treat size. It’s perfect for freezing for later or grab-and-go snacks for the summer when it seems like we always have somewhere to be. Either way, I feel this recipe will stick around our home for a while.

Little Mini Muffins

Ingredients in Banana Bread Mini Muffins Recipe

  • Butter and Yogurt. These two ingredients will give these muffins tons of flavor and keep them nice and soft.
  • Sugar. I use plain white sugar in this recipe. Brown sugar would also be good and keep them a little moister.
  • Egg, Baking Powder, Baking Soda. All of these things help the mini muffins stick together and rise properly.
  • All-Purpose Flour. You can also use Wheat Flour, or Gluten Free Flour.
  • Banana. This recipe only needs a single banana so if you need to use up several you will need to make a double batch. 🙂

Instructions for Making Banana Bread Mini Muffins

In a large bowl, cream together the butter and yogurt, add in the sugar.

Mix in the egg, flour, banana, baking powder, and baking soda. Mix well until all ingredients are combined and no lumps remain.

Drop into a greased or lined mini muffin pan. Bake at 350 degrees for about 15 minutes or until the muffins are just brown on the bottoms. (You can do the toothpick test) Enjoy!

Baked Banana Muffin

For something a little different, you can also add in 1/4 cup of mini chocolate chips to the batter before baking for a Chocolate Chip Banana Bread muffin. If you aren’t taking these on the go, they are delicious topped with a bit of butter or cream cheese as well.

  2. One of my fondest memories as a child was waking up to find my mom had made banana muffins. We’d have a couple for breakfast before school and then the rest would go into the freezer to be taken out one at a time. They never lasted nearly as long as we wanted but they where sooo good. Can’t wait to try your recipe.

  5. We love banana bread, it’s such a great way to use bananas that are past their best. Sometimes we need to save the bananas in the freezer to have enough for bread but, just using one banana, this recipe is much more practical for a small household.

  11. Made these delicious muffins today. Doubled the recipe and used 3 bananas. I didn’t have any yogurt so I substituted sour cream for it. Put in less sugar then it called for as some replies stated that they were a little sweet. I added chopped pecans and made 58 Mini muffins. They are just delicious. Thank you for the recipe, I will be making them often.
