Simple Blueberry Muffins Recipe

I picked up some blueberries last week while they were on sale. It’s not something I normally buy because they are expensive but I thought it would be a good treat. I decided this weekend I wanted to make muffins with them and I came up with this eggless recipe.

Easy Blueberry Muffins

What you need:

  • 1 c. blueberries fresh or frozen
  • 2 c. flour
  • 1 1/2 t. baking soda
  • 1/2 t. salt
  • 3/4 c. sucanat or sugar
  • 1 c. milk
  • 1/3 c. oil

Mmmm, blueberries…..

Mix together the flour, salt, and baking soda.

Add in the sucanat. You can use regular sugar instead if that’s what you have.

Add in the milk and oil. Milk at room temp is the best for recipes like this!

Don’t overmix. Fold in the blueberries.

Put into a greased muffin pan or a muffin pan lined with cupcake liners. I sprinkled a little turbinado sugar on top before I baked.

Bake at 350F for about 25 minutes or until a toothpick comes out clean. Yum!

  1. I’ve made these twice now, once with fresh strawberries and once with frozen blueberries. I will admit I also used real sugar. They are easy and very tasty. Thanks for the recipe!

  2. I made these (with sugar) and they were so yummy! I’m going to make them again tomorrow and try to substitute maple syrup.

  3. I’m making these now. I’m using frozen blueberries. Do I need to thaw them first? Also I discounted about 1/8th cup of floto add in 1/8th cup of livfit superfood organic supplement. I’m trying to get my hair to grow back. I don’t know if it will work but I hope I’ll be healthier.

    1. I do not thaw frozen blueberries before using in baked recipes. It usually makes the muffins a little more purple but they taste the same 🙂

  4. I made these with rice flour instead of regular flour (I am sensitive to wheat) and they turned out wonderful. So wonderful that my husband (a diabetic) did not feel any effects from eating several in one sitting.

    I think blueberries slow the effects on diabetics when they eat gluten products, so this is a winner for us. I lost the recipe and had a bit of a time finding it again here – but eureka! Here it is.

  6. I make blueberry and raspberry muffins using organic hot hot bran cereal. A cup approx. I’m gluten free . I add a half to a cup of boiling water and some plain yogurt. Eggs if desired. A tblspoon or so of melted butter: Add the fruit. 400 until done.

  8. Hey someone directed me to you. I want to start making my own pancake and muffin mix, etc.. but have it in containers and just add the liquid to how ever many cups can I do that with any of your recipes?
