Breakfast Muffins

I don’t know about you but I am constantly looking for grab -n- go breakfast recipes. I like having fresh fruit but I always know I need a protein burst to kick start my day. This muffin has 2 sources of protein (sausage and dairy) and you can whip it up quickly. As an added bonus this recipe freezes great so mix up a double batch, stick them in the freezer and enjoy for the next week!
Breakfast Muffins
What you need:
- 2 1/2 c. flour
- 1 1/2 c. cheddar cheese, shredded
- 1lb sausage
- 2 t. baking powder
- 1 T. sugar
- 1/2 t. salt
- 1/2 c. butter, softened
- 1 1/4 c. milk
Brown up your sausage. I used my homemade beef sausage made from the lean grass fed beef we buy but note that you may have to drain your sausage if it’s not as lean.
While the sausage browns you can shred up the cheese into a large bowl.
Add in the baking powder, flour, salt, and sugar.
Then add in the softened butter. Cut the butter into the mixture. It will look chunky.
Add in the sausage and milk. Mix.
Drop by tablespoon full into a greased or lined muffin pan. Bake at 375F for about 15 minutes or until a toothpick comes out clean and the tops begin the brown slightly.
Like I said above, these freeze nicely so make extras and freeze for future meals on the go!

What’s the best way to prepare frozen muffins for eating on school mornings? I love the idea of making these ahead for back-to-school time.
Frozen Muffins will usually thaw overnight. I usually put a week’s worth into a freezer bag and pull it out at the beginning of the week and keep it in the fridge.
I trust it makes a dozen? I can’t find if it tells how many. Looks yummy! Trying tonight! Thank you!
Yes, this recipe should make one dozen regular sized muffins.
If you freeze them and thaw in the fridge can you use the microwave to heat them up, or are they eaten at room temperature?
Either way. We prefer to heat these up before serving.

Yes, you can use an all purpose gf flour in these. You may want to add in an egg or two though as a binder.
