Cheesy Baked Tomatoes

You know how some dishes only work when you have fresh from the garden produce? Store produce just doesn’t have the same flavor as the fresh stuff so even if you have the ingredients it just won’t work.

This is one of those recipes. One of those Fresh Tomato Recipes.

For this recipe, you need some fresh garden tomatoes and I mean fresh. Go out and pick some and then make this side dish! Of course it will work with other tomatoes but it won’t taste the same…nothing beats a fresh garden tomato!

Cheesy Baked Tomatoes Recipe

What You Need:

  • Fresh Garden Tomatoes
  • Mozzarella Cheese, shredded
  • Olive Oil

What to do:

First, start by slicing up as many tomatoes as you wish to make. We usually make a tomato for each of us so a good rule of thumb would be a tomato per person.

Drizzle a little bit of olive oil on a baking sheet with sides and place the tomatoes on it. You can sprinkle a little salt over the top at this time, it’s up to you, we’ve done it both ways and both is good.

Sprinkle some of the mozzarella cheese over the top of the tomatoes, no need to go overboard, we want to taste the fresh tomatoes, not drown them in cheese.

Bake at 350 degrees until the cheese is beginning to brown and they are bubbly. This takes about 15 minutes depending on your oven temp.

Enjoy these cheesy tomatoes as a side dish to other fresh garden veggies! We like to eat these with fried zucchini and squash and any other garden vegetables we happen to have on hand at the time.

  7. I live in rural Virginia and we have what are known as Hanover tomatoes. The town of Ashland actually has a festival celebrating the world’s tastiest tomato! I think they’re actually old standard varieties like Better Boy, but the flavor comes from the soil the plants are grown in.

    Here’s my take on a healthy mini pizza:
    Butter and lightly toast English muffin halves. Then top with a tomato slice, salt, pepper and a little Italian seasoning and cheese (I like Parmesan). Put back under broiler until cheese bubbles. Sooo good!

  8. Thanks. Great simple recipe for when you have a hot oven. Delish. Cheated and added a large basil leaf per tomatoand topped with shredded parmesan. Not necessary as it is a wonderful fresh recipe
