The last place I want to find myself on Christmas morning is in the kitchen cooking while the rest of the family is in the living room enjoying the morning together. That’s why I love this recipe! I can prepare everything the night before so it is ready to go in the morning.

When I start the coffee brewing, I just have to place it in the oven. Then it can cook while enjoying our coffee and opening presents together.

I have been making this very easy Christmas Brunch Casserole for my family for the last few years, and it has been a huge hit! It’s hearty and delicious and is one of those recipes that you can easily adapt to your family’s tastes or dietary needs.

Substitute the bacon with ham, leave out the mushrooms, and add some green and red bell peppers- it’s versatile.

Eggs

Ingredients in the Christmas Brunch Casserole Recipe 

  • Bacon. If you don’t have bacon you can use ham, sausage, or another savory meat.
  • Onions and Mushrooms. These bring so much flavor to your casserole. Don’t leave them out unless you have to!
  • Butter. This is just to grease your casserole dish. You can use a mild vegetable oil instead if needed.
  • Hashbrowns. You can make your own for this, or you can go the easy way and use store-bought, pre-made frozen hashbrowns.
  • Salt, Garlic Salt, Black Pepper, and Parsley. These are the basic seasonings that you’ll need to make your casserole.
  • Eggs. Several eggs are needed to tie this casserole together.
  • Milk. This is to help keep your casserole the right texture. You can use a milk alternative if needed.
  • Cheddar Cheese. Shredding your own cheese is always the more frugal option but use what you have on hand. Can be made with vegan cheese for a dairy-free version.

Step By Step Instructions for Making Christmas Brunch Casserole

Place the bacon in a large skillet. Cook over medium-high heat until evenly brown. Drain and set aside. Add the mushrooms and onion to the skillet; cook and stir until the onion has softened and turned translucent and the mushrooms are tender about 5 minutes.

Grease a 9×13-inch casserole dish with a tablespoon of butter. Place the potatoes in the bottom of the prepared dish. Sprinkle with salt, garlic salt, and pepper. Top with crumbled bacon, then add the onions and mushrooms.

In a mixing bowl, beat the eggs with the milk and parsley. Pour the beaten eggs over the casserole and top with grated cheese. Cover and refrigerate overnight.

Preheat oven to 400 degrees F and bake in the preheated oven for 1 hour (or until set).

I prepared the casserole the night before, except for the eggs. Then, in the morning, while we wait for our coffee to finish brewing (we always make the kids wait until mom & dad have coffee before opening any presents), I quickly scramble and add in the eggs. Then I popped it into the oven, and we opened the presents.

The breakfast casserole is just finishing up about the same time we are finishing up with the presents. I love it because I look like a super mom, and it’s so easy, too! Plus, it lasts a couple of days, so we can enjoy leftovers for the next few days while the kids are still home from school.

This is a recipe I’ve done for mega years. It’s called ‘The Christmas Morning Wife Saver’. I have done it for years ALL mixed together (the night before). Eggs and all. Hasn’t killed me yet. It is delicious and saves a TON of time (and stress) in the morning.

Ingredients

  • 1 pound bacon

Recipe Notes

You can mix all of your ingredients the night before and refrigerate overnight, place your casserole in the oven in the morning to bake.

  1. Hi, sounds delicious but 1 question…you say to pour the beaten eggs over the casserole, and then said you scramble them the next morning. I’m a little confused (or maybe need some coffee to comprehend better, lol.)

    1. I believe she just meant that she preps the entire casserole the night before, except for the eggs. Then in the morning she scrambles (mixes) the eggs together and pours over the top and then bakes.

  5. This sounds delicious but there will only be 2 of us here on Christmas morning. I am going to try doing half in an 8 inch square pan. Christmas Eve we will have 15-17 here but no one will be here Christmas morning. Thanks for the recipe. Also making the coconut macaroon tomorrow.

  6. only 4 eggs? Recipe doesn’t indicate how many it serves. I have 6 adults to serve. Will this recipe suffice?
