This delicious Coffee Cake Recipe from Scratch is the perfect treat for breakfast! It can be made quickly with a few pantry ingredients, and pairs perfectly with your morning cup of joe.

I’ll admit, I’m not great at making breakfast. Usually, the best I can do is offer a variety of special toppings for our oatmeal and most of the time my family is happy with that. But, when company comes to visit we like to offer something a bit nicer than oatmeal and one of the recipes I’ve been making lately is this delicious Coffee Cake recipe from scratch. I’ve made a simple coffee cake before, but I really wanted to make this one good, so I put a special ingredient in this one for a burst of flavor to make it the best coffee cake recipe.
This cake is quick…you can whip it up in about 30 minutes and it only needs a few basic ingredients, that I’m sure you have on hand. Coffee Cake is pretty hardy so you can use wheat flour if you prefer, or even gluten free.
Coffee Cake Recipe From Scratch
What You Need:
For the Batter:
- 2 Eggs
- 1 teaspoon Vanilla Extract
- 1 cup Sugar
- 1 cup All-Purpose Flour or Wheat Flour or Gluten Free Flour
- 1 teaspoon Baking Powder
- 1/2 cup brewed Coffee
- 1 Tablespoon Butter
For the Topping:
- 2 Tablespoons of butter
- 1/4 cup of flour
- 1/2 cup of brown or raw sugar
Start by making your cake batter. In a bowl, mix together the eggs, vanilla, and sugar until well blended.
Add in the flour of your choice and the baking powder.
Slowly mix in the coffee and butter (it will help if the butter is melted). Stir together until all ingredients are mixed. The consistency will be that of a dessert cake batter.

Pour the batter into a greased 8×8 baking pan. Bake at 350 degrees for 15 minutes.
While the cake is baking, mix up the streusel topping. In a bowl, mix 2 Tablespoons of butter, 1/4 cup of flour, and 1/2 cup of brown or raw sugar. Stir together with a fork or spoon until crumbly.
Remove the cake from the oven after 15 minutes of baking, sprinkle the streusel on top, and place back in the oven for an additional 10 minutes.
Remove from the oven and let it cool before serving.
If you want, you can also make an additional light caramel sauce to go over the cake. Just heat up 1/2 cup sugar, 2 Tablespoons of butter, and 1/4 cup of half and half or cream on the stovetop until well combined. Boil together for 1 minute and drizzle over cake.

I have never seen a recipe for coffee cake that included coffee. Always thought you were suppose to eat while drinking coffee. I would sub water or milk for the coffee as my husband doesn’t like coffee. Might add cinnamon to boost flavor. But it is nice that it makes a small cake. My recipe from my mom uses a 10 inch tube cake pan and is quite large.
