Shredded Roast Beef is one of my easiest, go to meals. The way I have come to make roasts is an easy way to have on hand shredded beef to use for a great variety of meals.

First of all, you can use any cut of roasts. We have our own beef processed, so there is a variety of roast cuts. They include arm roasts, chuck roasts, and sirloin tip roasts. Any cut that you have or can find reasonably priced at your store or local butcher will work.

Secondly, using the crock pot, is the easiest way to assure that you will get a finished roast that is tender and easy to shred.

I use a totally frozen roast. In the late evening, I pull a roast from the freezer and put it directly into my crockpot. I usually add in some spices on top, like seasoning salt with garlic and onion powder and pepper. You can add whatever blend you prefer or can leave off the spices. Add approximately 2 cups of water to the bottom of the crockpot. My setting on my crockpot goes on low for 10 hours. This is the setting I use. Leave your roast and head to bed! The next morning, your roast is done. I shut off my crockpot and let it cool down a bit.

Now it is time to remove the roast from the juice and shred it up. I clean out the crockpot, reserving about 1 cup of the liquid from the pot. I use the reserved liquid to keep the meat moist as I am using it or reheating it. Your roast is ready to use now for whatever you would like to use it for. I have a couple different ways I usually use mine. You can use it right away or refrigerate it for use later that day or the next several days.

Here is what I usually do with ours:

I take the shredded beef and add in a jar of homemade canned salsa to it. You can place it in the crockpot for the day on low or just rewarm the meat with the jar of salsa on the stovetop. This is a wonderful mix for Shredded Beef Tacos. This is one of our favorite uses.

We take the shredded beef/salsa mix and fill a flour or brown rice tortilla with the beef mixture. Add in whatever extra ingredients you prefer. We usually use typical taco filling ingredients of lettuce, shredded cheese, tomatoes. Other great additions are rice and beans. Once you have your ingredients inside the tortilla, wrap it up. At this point, we like to grill ours for a crispy, golden outside. Grill it on each side until the filling is warm (if you are using it as leftovers) and the outside of your shell is golden, crispy brown. Once grilled, you can add in additional toppings.

This is just one idea to use with your roasts. Making your roast overnight allows you a lot of flexibility to use the meat in numerous ways. I hope you enjoy this quick and easy meal and have other ideas also.

Enjoy!

  1. Roasts in the crockpot are a lifesaver on busy days! We usually eat 1-2 roasts a month and we love shredding them for taco fillings too. I usually prepare them in the morning and let them cook all day, but I like your way of cooking them overnight. I may have to try that.

  2. With the juice make beef gravy, add a cup or so of the roast to the gravy and serve over rice. (this is our last meal when I cook a roast) We love hot roast beef sandwiches in our house too. I use Texas toast, pile on some roast beef with gravy and serve with mashed potatoes.
I always cook the roast like you do, starting with a frozen roast, and I add one other thing to my crockpot. I slice one onion into thin slices on the bottom of the pot. Then the roast and water. The onion is shredded too. It adds a lot of flavor to the roast beef and a bit of veggie to the food.

  3. Julie, this looks really yummy! I’ve been looking at how to incorporate different crockpot meals into our schedule that are yummy and don’t make my family feel like I dropped the ball with dinner.
I’ll give this one a try!

  8. I love making Italian Beef this way. I put a frozen chuck roast in the crock pot overnight. The next morning I shred it up, and add a couple packets of dry Zesty Italian (salad dressing) seasoning mix. Serve it on hoagie rolls with sliced banana peppers…Yum, Yum! Enjoy 🙂

  12. I do this often! I love shredded beef in a salad, or with barbeque sauce in a hamburger bun, or mixed with cream cheese, shredded spinach and shredded beef stuffed into large pasta shells topped with spaghetti sauce! The possibilities are endless. Also – to hippockets and Angela above – when you use shredded beef, it looks like more! So, one roast can be used for several meals! Great……. now I’m hungry! 🙂
