Avocado Corn Salsa Recipe

During the summer months, we work on many projects and spend long days outside in the garden. It’s easy to work up an appetite between meals.

This Avocado Corn Salsa recipe is one that we have been making recently to curb our between-meal cravings. It’s delicious and tastes so fresh! Plus, I love that I can use so many things from the garden…tomatoes, onions, and soon… corn!

Ingredients in the Avocado Corn Salsa Recipe

  • Corn. You could use fresh off the cob, from a can, or slightly fried for different flavors and textures!
  • Avocados. These should be ripe but not overripe so they aren’t mushy.
  • Onion. Red or yellow onion works best in this recipe. White or sweet onion will also work well.\
  • Limes. This is a must-add for flavor!
  • Tomatoes. Like the avocados, you want these to be ripe but firm so they don’t add mushiness to the salsa.
  • Black Beans. These need to be cooked so you can use canned black beans or you can use leftover cooked black beans.
  • Garlic Salt. Or garlic and salt if you don’t have them as a blend.
  • Cilantro. This is optional but always adds a good salsa flavor.

Instructions for Making Avocado Corn Salsa

Start by chopping up the onion, avocados, and tomatoes. Of course, if you are using fresh corn, you will need to remove it from the cob.

This particular time I used frozen corn because our corn isn’t quite ready. You can use canned or freshly soaked black beans in this recipe, but you will want to rinse either first.

Pouring lime juice

In a bowl, place the avocado, tomato, onion, corn, and black beans. Squeeze the juice from the 2 limes and pour it over the top of the salsa. Sprinkle in a little garlic salt (we use about 1/2 teaspoon) until it’s reached the perfect saltiness for your taste. Toss with a spoon lightly until everything is mixed.

Yum! Aren’t you ready to enjoy this fresh salsa recipe? The flavors mingle, and the salsa tastes even better if it sits in the fridge a little while before serving. This recipe makes a relatively large batch that will serve at least 6.

Ingredients

  • 1 cup Corn fresh or cooked
  • 2 Avocados
  • 1 small Onion
  • 2 Limes
  • 2 medium Tomatoes
  • 1 1/2 cup Black Beans soaked/cooked
  • Garlic Salt

  1. Start by chopping up the onion, avocados, and tomatoes and place them in a large bowl.
  2. If you are using fresh corn you will need to remove it from the cob. Add it to your bowl.

Recipe Notes

This recipe will make a fairly large batch that will serve at least 6. If you have extras you can just refrigerate it until you are ready to snack on it again. The flavors will mingle and get better after sitting for a while.

Storing Leftover Corn Salsa

This is a great dip to take to picnics, potlucks, or other outdoor gatherings. If you have extras you can refrigerate it and enjoy the leftovers as a snack alongside homemade corn chips, as we do, or as a light lunch the next day.

Homemade Corn Chips

If you don’t have any chips to go with this recipe, you can make your own homemade corn chips! Just use some corn tortillas or you can use homemade Corn Tortillas, cut into strips or triangles, brush a bit of mild vegetable oil on the outside of the chips at bake at 350 degrees F for about 5-7 minutes or until crispy.

  3. This is really similar to what I make all the time around here (in fact we had it tonight with supper). The only difference is that I don’t add avocado (although I will definitely try it next time) and I do add cilantro (so yummy). In addition to having it with chips, we also love it in burritos!
