Fruit Filled Pumpkin Bites
The beginning of fall means that our love for all things comfort food and treats has begun. Thankfully we’ve been able to bring in some kind of harvest even though it wasn’t what we were hoping for. So with a semi-stocked root cellar we are able to make many dishes just off of what we have on hand.
My boys are always looking for a snack. They may be little yet but they sure do love to eat! We came up with this simple little snack the other day while trying to come up with new ways to incorporate pumpkin into our diet. These little Pumpkin Bites are filled with mostly fruit so they make a nice, healthy snack. These are great for a little take-along snack if you need to be in the car too.

Pumpkin Bites Recipe
What You Need:
- 1 cup pureed Pumpkin (here’s how to make your own)
- 2 ripe Bananas
- 1/4 cup raw sugar (or brown sugar)
- 1/4 cup Applesauce
- 1/3 cup vegetable Oil
- 1 cup All Purpose Flour (we use All Purpose Gluten Free Flour)
- 1 teaspoon Cinnamon
- 1/4 teaspoon Salt
- 1 teaspoon Baking Powder
In a large bowl, mix together all ingredients. It works best if you start by mashing the banana and adding it to the pumpkin and applesauce and then adding in the remaining ingredients.
Drop the batter into a greased or lined MINI muffin tin, filling each of the cups at least 3/4 full. (fuller is ok) We like using these Unbleached Muffin Liners.
Bake the Pumpkin Bites at 350 degrees for about 25 minutes or until the bites are nicely puffed up and not wet to the touch. They will collapse after removing them from the heat. Enjoy them warm or cold.

I’m trying this recipe today, looks easy and yummy. You didn’t specify the qty of pumpkin. I have both 16 and 29 oz cans. I noticed your lesson for making purée results in 2C pkg, so I’m guessing the 16 oz can is for this recipe.
I have made homemade pumpkin puree, very simple and easy to add to many recipes.
I use 1 cup of pureed pumpkin in this recipe.
This looks good for grown ups too I have made the baby lotion and use it for me I love it I made the lip balm but I don’t like the taste of honey do you have any ideas? You could try increasing the shea butter in the recipe and lowering the beeswax but the lip balm won’t be as firm.
