In our part of the country, once spring into summer gets here, it is time to change up the fruit we are eating. Usually, during the winter season, apples and oranges become the staples. It is great when spring and summer arrive and we have a great selection of fresh fruit. This usually includes a great selection of fresh berries, especially.

It is a wonderful time of year, with potlucks and backyard barbecues, to make a fresh fruit pizza. I used to make fruit pizza using a pre-packaged sugar cookie dough….Yes, full of sugar and other substances that I could not pronounce.

In my quest to eat a bit more healthy, I adjusted a “homemade” fruit pizza recipe to fit the guidelines that work for me. This is what I came up with. You can change up the fresh fruit for whatever is in season where you live. I am also using gluten free flours, but feel free to use the recipe as a guideline, and use what works for you.

What You Need:

In a mixing bowl add:

  • 1/2 cup brown rice flour + 1/2 cup coconut flour (or 1 cup flour of your choice)
  • 1 teaspoon baking powder
  • 1 Tablespoon sugar (I use organic evaporated cane sugar)
  • pinch of salt

To the dry mixture add:

  • 1 egg
  • 1/2 cup plain yogurt (I use 1/2 cup thickened kefir)
  • 3/4 cup melted butter
  • 1/4 cup water

Mix the wet/dry ingredients together until well incorporated.

In a 9 x 13 pan, place the mixture and pat it smooth into the pan. I usually wet my hands with plain water to get it patted into the pan. Bake the crust mixture for 20 minutes at 350 degrees. Allow the crust to cool.

While the crust is baking, remove 12 ounces of cream cheese from your refrigerator and allow it to soften to room temperature, in a small mixing bowl.

Add to the cream cheese:

  • 1 T. vanilla
  • 1 T. sugar

Mix together this mixture until it is smooth ( it should be soft, like a creamy frosting)

Spread this mixture over the cooled crust.

Cut strawberries into small pieces (or other fruit or combination of fruits). Place fruit on top of cream cheese layer and press down slightly. Cut into squares. This can be eaten right away or placed in the fridge until needed.

  7. This may sound like an odd request, but are there any substitutes for the yogurt (maybe a snack pack pudding or just another ingredient altogether)? We have two people here who can’t eat yogurt due to allergies and stomach issues. Just wondering if anything else would work with the crust! Thank you 🙂

  9. I just made the crust and the dough did not look like yours in the picture at all. I used regular unbleached unbromated white flour as i do not have the ones you mentioned, could this be the reason? The 3/4c of butter seemed like a lot. I don’t usually have trouble baking etc.

    1. Did you make any other changes to the recipe? Are you high altitude? The amount of butter is correct, the dough will seem sticky when pressed into the pan but should come out correct.

  11. Thanks for the excellent recipe! I halved it just to try it out. I also used egg white, coconut oil, and coconut milk in place of the whole egg, butter, and water. I combined almond flour and brown rice flour. My whole family asked why I didn’t make a bigger one. 🙂

    1. Sounds yummy 🙂 Normally I am not so fond of pizza but this seems worth trying. I never make deserts with fruit anymore since I found out that if had meat at dinner before(or in any other meal you eat before the fruitdesert) your body doesn’t take in the vitamins in the used fruit anymore. So I would eat this as a dinner. Thanks for sharing!

    Same idea, no crust to make (rather eat my nuts whole and separate so my mind knows I’ve eaten them; same idea with smoothies, rather eat my fruit separate…) and the cream could be coconut cream if needed. I don’t even whip the cream. The combo’s amazing tho.

  14. Try adding a little grated orange zest to the cream cheese and soaking the chopped strawberries in a few tablespoons of Grand Marnier for 10 minutes. I do it on a biscuit crust and serve it at brunches. It’s heaven.
