Easy Homemade Cake Truffles

Homemade Cake Truffles Recipe

Several years ago, my hubby came from work on a Saturday and told me he needed something to bring to a holiday potluck at work this week on Monday. I mentioned a few things but he told me that people were already bringing those. Then I brought up the idea of cake truffles. I’ve seen a recipe for these being passed around the blogosphere. I thought it looked interesting but I passed it by because it only had 2 ingredients, neither of which I keep in the pantry. Dry packaged cake mix(nope!) and frosting in a tub(worse!). So I decided to come up with my own version of this little treat using a homemade cake recipe.

Homemade Cake Truffles Recipe

What you need:

  • 1 1/2 c. flour*
  • 1 c. sugar
  • 1/2 t. salt
  • 1/2 t. baking soda
  • 1/4 c. cocoa powder
  • 1/3 c. oil
  • 1/2 t. vanilla
  • 1 c. water
  • 2 8oz pk. cream cheese
  • chocolate chips

*To make these Gluten Free Cake Truffles, simply substitute Gluten Free All Purpose Flour for regular flour in this recipe.

Mix together all the ingredients except for the cream cheese and the chocolate chips. Pour in a 9×9 pan and bake at 350F for 20 minutes or until a toothpick comes out clean. Let the cake sit until it is completely cooled off.

When the cake has cooled, crumble it up into small pieces.

Soften the cream cheese until it’s soft and workable.

Mix the cream cheese in with the crumbled cake mix. Try and mix evenly so you don’t have big clumps of cream cheese anywhere.

Shape into balls. (I just used a cookie dough scooper.) Melt the chocolate chips and drizzle on top of the truffle balls. Let the chocolate on top cool and store in the fridge. Most of the cake truffle recipes I found covered the entire truffle in chocolate, but I think that’s entirely up to you. I didn’t want these to be too sweet so I just drizzled a little on the top. They were perfect this way!
