I love this product I get to tell you about today because:
- It’s local.
- It’s natural.
And that combo is my favorite! The Circle View Guest Ranch (which is an awesome B&B located in the Badlands of South Dakota, just so you know 🙂 ) is now selling home raised natural honey right from the Badlands. Did you know that the flavor of honey can depend on many things, including the flowers that the bees pollinate? The Kruse Aparies honey is a sweet clover honey. Here is Circle View Ranch’s description of the flavor:
Special climate, soil conditions and altitude combine to produce a honey that is extremely mild, aromatic, heavy bodied and very light in color.Because of its mild flavor, this honey is an excellent choice for table use. It is also perfect for cooking or baking as it will not impart an excessive honey flavor in the end product.
When I buy honey I either try and find a local honey or if I can’t, I will go with a raw honey. I really do prefer a honey with a light sweet flavor because I’m not much for the over powering sweetness some honey’s have. Luckily, the Kruse Apiaries honey is that perfect combo of sweetness without being too sweet.
Amy, from Circle View Guest Ranch was kind enough to provide us with a favorite recipe from the B&B. She uses the Kruse Honey for this special Blueberry Granola.
BLUEBERRY ALMOND GRANOLA
Circle View Ranch
- 6 Cups Old Fashioned Oats
- 3 Cups Shredded Coconut
- 2 Cups Whole Almonds, chopped
- 1 T Vanilla
- 1 T Cinnamon
- ¾ Cup Vegetable Oil
- ¼ Cup Honey
- 1 t Almond Extract
- Dried Blueberries
In a large bowl combine oats, coconut and almonds. In a separate microwavable bowl, mix oil, honey, vanilla, cinnamon and almond extract. Microwave mixture for 30 seconds then stir to combine well. Pour wet mixture on the oats mixture and using large wooden spoon (or your hands) stir to combine making sure that all oats are covered with the wet mixture. Spread mixture in a thin layer on 2 greased baking sheets. Bake at 350 degrees for about 15 minutes then remove from oven and using large spatula, stir granola to promote even baking. Rotate pans in oven and bake for another 15-30 minutes or till well browned. Remove sheets from oven and cool completely before taking granola out of pans. Stir in blueberries and enjoy with milk or vanilla yogurt. Freezes well.
