Last night we had potato soup made with local onions I bought at the farmers market, chicken broth from my local Hutterite chickens, and potatoes from the garden. Since we didn’t really use much of anything that cost us money supper was only pennies last night.

Think simple. Last night I was hurrying around the kitchen trying to come up with some elaborate supper when we don’t have many things left from what we bought locally. I didn’t realize right away that I had the few things I needed to make a yummy supper, no matter how simple it was. Just our little bowl of potato soup provided veggies, healthy starches, and good protein from the chicken bone broth. So don’t overlook the simple meals. They may not be the prettiest or the fanciest but they fill you up!
