Make Ahead Casserole – French Toast

Anything that can save me time from day-to-day becomes a complete lifesaver! I really enjoy crockpot cooking, overnight meals, etc, they make the next day seem to go a little smoother. One less to stress about. Plus, when the pregnancy fatigue sets in, knowing I don’t really have to “cook” makes me feel a lot better! Now, making my early mornings easier? That can sometimes be a challenge with two picky toddlers.
French Toast Casserole to the rescue! This is my go-to meal, when I need something easy for the morning. Prenatal appointments, grocery shopping, family outings- this is a great way to get a homemade meal in without slaving in the kitchen or getting it really messy. One pan, that’s it! It really takes no time at all.
Make Ahead Casserole – French Toast
Ingredients:
- Half Loaf of Bread (I prefer using French bread, but all I had was just your average joe bread)
- 5 eggs
- 1/3 cup milk (I use almond, vanilla almond would be amazing)
- 1 tbs cinnamon
- 1/4 cup brown sugar
- 1/4 chopped walnuts (this is optional. I love them, my my hubby is not a fan, so it’s not in mine)
Directions:
Night before-
1. Coat a 9×13 pan with butter
2. Mix eggs, milk, cinnamon, and brown sugar together.
3. Spread bread into pan
4. Pour liquid over bread, making sure to get in between the slices too.
5. Top with nuts.
6. Wrap with cling-wrap and place in fridge overnight.
Morning of-
1. Pre-heat oven to 350 degrees.
2. Place dish in oven uncovered, cook for 45 mins-hour until liquid is cooked through.
3. Cut, top with syrup and powdered sugar!
This is great for Christmas morning too (we’ve done it plenty of times)! My children and the hubs love this, and I love making it since it takes absolutely no time at all. This is a new mommy’s dream meal too! There is also a ton of ways to dress this up- fresh fruit, preserves, pumpkin, etc.

The fact that its a make ahead casserole is so great so there is less rushing/prep time in the morning! Love this recipe!
This is basically bread-and-butter pudding, but without the butter! I’ve never tried leaving it overnight before; I can only imagine it improves things, though.
Try adding raisins instead of (or as well as) the nuts, and substituting nutmeg for the cinnamon. This is proper depths-of-winter comfort food… 🙂
I made this last night to cook today. Today my husband was called into work and I didn’t want to send him there hungry so I just cooked them on my griddle with butter and they turned out great. Next time, I’ll bake them but add nuts and raisins. Very yummy.
Hi there:). I’ve been reading your blog all morning. Once I started I couldn’t stop:) you’re great thanks for all the ideas, believe me I’m going to be 68 and the one thing I don’t care for anymore is spending a lot of time in the kitchen. So these are awesome. I wanted to tell you, if you line your casserole or 9X13 with foil ( you can give it a shot of Pam on the bottom if you like. (If you don’t have the wide foil make a folded seam down the middle) make sure it overlaps on the sides and ends long enough to seal when frozen, freeze it, remove from dish, seal the edges of the foil together, put in a freezer baggie and freeze. You can make a few to have on hand. Allow to defrost with foil on,in the refrigerator because of the eggs, place in casserole ( foil and all, opening it back up of course). I do the same thing with quiche. Works great , with quiche though, I thaw it halfway usually. Thanks so much for what you’re doing. HUGZ:)
i feel as if this recipie would be nothing but a soggy mess in the morning. Have you ever had this problem?
Can I substitute honey for the sugar in this & other recipes?
Is this mushy. We love French toast but everytime we have made casserole (not yours) it comes out real soggy and mushy and my kids don’t like the texture
sub “coconut nog” for milk /eggs/spices {allergic to dairy & eggs} – so this works great!
if no bread in house, you can even use really dried out GF croutons -yummy & filling.
If I want to make this a freezer meal, would I bake first then freeze or freeze not baked.
I think it could be done either way.
