Mozzarella Stuffed Meatloaf

 I’m all about comfort foods in the winter. Anything warm that comes out of the oven or the crock pot is heading straight to my belly! I love both meatloaf and meatballs because not only do they make a warm, filling meal, they also both freeze really well so you can make extra for future meals. (I bake and then freeze)

This Mozzarella Stuffed Meatloaf recipe is fun because it’s just a simple twist on traditional meatloaf but it seems to be a great addition for picky eaters and those that generally don’t like meatloaf. I like to make this recipe because it’s so simple and takes only a few things.

Mozzarella Stuffed Meatloaf

This simple meatloaf recipe is a fun twist on traditional meatloaf with the addition of cheese!

Yield – 4 servings

Preparation Time – 10 minutes

Cooking Time – 1 hour

Ingredients

  • 1 tablespoon Minced Dried Onion
  • 2 pounds lean Ground Beef (if available I like to do 1 pound beef and one pound bison)
  • 1 large Egg
  • ½ Cup Bread Crumbs (can add oats instead if you are gluten free)
  • 3 Tablespoons Ketchup
  • 1 cup shredded Mozzarella Cheese

Directions

  • Preheat oven to 350 degrees.
  • In a large bowl, combine all ingredients, except the cheese, and mix  well.
  • On a large sheet of parchment paper, flatten out the meatloaf mix into a rectangle making it about 1 inch thick.
  • Sprinkle the cheese over the meat, leaving a 1-inch boarder around the edges.
  • Using the parchment paper to help, roll your meatloaf up into a pinwheel. Ensure that the meatloaf is sealed at both ends, and there is not cheese poking out anywhere.
  • Place loaf into a 9×12 loaf pan and bake uncovered at 350 degrees for 1 hour.

Personally I love a good Homemade BBQ Sauce topping on all of my meatloaves…even this one! Meaty…cheesy…barbecuey….so good!

  1. This recipe looks delicious! Thanks for sharing! 🙂 When I make meatloaf, I usually have some type of potato side and broccoli. In the warmer months, fresh corn on the cob is good, and in the winter, maybe some ginger glazed carrots. Love your recipes!

  3. I’ve been making a variation of this for about as long as I’ve been married – 47 years. But, because I’m on the ‘make it good but simple’ side I just put half the meatloaf in a 9×5 pan, put shredded cheese on top leaving the 1″ margin and top with the rest of the meatloaf mixture, press down well and bake.
    I’ve used cheddar, mozzarella with Italian seasonings, swiss, and even cream cheese with chives and garlic. All are good. Meatloaf is a family favorite because it’s delicious, comforting, homey and even good for a nice meal with guests just gussy up the rest of the meal. You can even make them in muffin tins and freeze what isn’t eaten. Quick meal for ‘those’ days.

  4. That looks amazingly delicious! I think I would add gluten-free biscuit or cornbread crumbs rather than oatmeal since my family has been eating oat-free lately.

  6. Very tasty looking twist on a classic dish. It’s funny, I’ve made meatloaf many times and with many variations but it just never occurred to me to ever stuff it (I’m sure I’m not alone on this). Great recipe idea, thanks for sharing it.

  7. Hi Marissa, i love this idea. i have used boiled eggs as a suprize inside but never thought of cheese. it would go good in the meatloaves i use taco seasoning in. thanks again for the great site!

  8. We love meatloaf and cheese inside-yummy! I’ve added sun dried tomatoes or chopped spinach, or any other greens I can hide and get the kids to eat! I may have added black olives at one point! Fun and delicious!

  10. This looks delicious to me. I think my family would love it. I typically use ground turkey, and I think it would with that as well, right? Maybe a little bit of extra seasoning since it isn’t as flavorful… can’t get ground bison around me.
