Oatmeal Lace Cookies Recipe

We were looking for a yummy new treat around the holidays to enjoy and after a bit of experimenting this Oatmeal Lace Cookies recipe is what I came up with. These cookies are light, airy, and crunchy. The little extra burst of chocolate helps to keep them together as they tend to be delicate. These are easy to make and only take a few ingredients. I came up with this recipe while we were living in our RV so you know that it can only have simple, basic ingredients because that’s all I had room for!

We love these cookies because they are just a little bit different from the norm. They are so buttery and the chocolate drizzle is optional if it’s not something you have on hand but it adds some wonderful extra flavor so it’s highly recommended.

Oatmeal Lace Cookies Recipe

This simple recipe is sure to please! These cookies are super crunchy and easy to make. Add in a hint of chocolate and you've got a great little treat!

Ingredients

  • 1/2 cup all purpose flour you can also use gluten free flour
  • 1/2 cup brown sugar we used raw sugar
  • pinch of salt
  • 1/4 teaspoon baking powder
  • 1/2 cup old fashioned oats
  • 2 tablespoons milk
  • 6 tablespoons butter
  • melted chocolate optional

Instructions

  1. In a large bowl, mix together all the dry ingredients.
  2. Melt the butter and add it and the milk into the mixture, stir until all ingredients are incorporated.
  3. Drop by teaspoonful onto a cookie sheet (I did not grease mine, these have quite a bit of butter in them).
  4. Bake at 400 degrees for about 10 to 15 minutes (depending on how hot your oven is), until the edges start to get very slightly brown.
  5. Let the cookies cool before removing them from the cookie sheet. Drizzle with melted chocolate.

Oatmeal Lace Cookies Recipe

These cookies don’t store well since they are delicate but the recipe doesn’t make a very large batch so they can easily be eaten for dessert or a special treat. You can store extras (if there are any) in the fridge in a container.

What I really like about this recipe is that most of the ingredients are dry ingredients so you can mix just those together and store in a bag or jar in the pantry and have a pre-made cookie mix for whenever you need it!
