
I started drying those 50lbs of onions I bought while coming back from Save Up this week. I’m going to be drying for days and days. I’m going to freeze some too. I shouldn’t have to buy any onions this winter at all!

I use 1 to 3 onions every single day, so onions are something I really want to grow in my garden this year. For two pounds of organic onions at the store, I pay $4, which I don’t want to do if I can find a way to grow and have my own. However, with the high heat and humidity in my area, last year’s crop went bad quickly. I like the idea of drying them in the oven. How long did you dry them and how did you store them? What is their shelf life? Thanks.
