A few weeks ago we were travelling across several states on vacation. In the week leading up to the trip I was busy not only getting food ready but also digging up and making some healthy “road trip” snacks! This week I’ll be sharing some snacks that we made for our trip. They follow our diet of being unprocessed and mostly healthy. I hope you enjoy!
One of the last snacks I ended up making for the trip was Banana Bites. I had seen on Pinterest the chocolate covered banana slices but when I actually sat down to make something similar I decided it was actually alot of chocolate and alot more work to actually totally cover the banana pieces fully in chocolate.
So instead I decided to do something much easier. All I did was slice up a ripe banana and place it on a wax paper covered pan. Then I melted chocolate chips and drizzled them on the top of the slices. I placed the pan in the freezer and flash froze the bananas. Once they finished (it did not take very long!) I snapped them off the wax paper and put them in a freezer bag and stored them in my camper’s freezer on the trip.
These were nice and cold for a treat during the hot weather on the trip! You would need a cooler or a freezer to be able to have these along.
