Simple Vegetable Pasta

This summer we dealt with an over-abundance of squash and zucchini and for the first time in my life, I was actually still picking zucchini through the end of October. Luckily our family loves zucchini in just about any recipe or form so we enjoyed every moment of the garden until we finally had our first freeze.

This simple dish was one of our favorites that we enjoyed this summer and I’m sharing it now so you can tuck it away until next year or you can make it with your zucchini if you enjoy a garden in a different season than our family does up here in the north. We love making zucchini noodles, however, I never found them to be hearty enough for our hungry family on their own so I make it work by tossing it with gluten-free noodles and a jar of hearty spaghetti sauce!

What You Need:

  • 1 large Zucchini
  • 8 ounces uncooked Spaghetti Noodles (I used gluten free)
  • 1 jar Pasta Sauce
  • Other vegetables as desired (you can also make pasta with yellow squash, carrots, or similar vegetables)

Simple Vegetable Pasta Spiralizer

How to Make Pasta from Vegetables:

You will need some kind of spiralizer or something to make “noodles” out of your vegetables for this recipe. I personally have a large Spiralizer because I can use it with the big zucchini in the summer. I’ve tried the smaller handheld kind and they didn’t work very well for that, although they do work well for smaller produce, like carrots. Start by creating noodles out of your veggies.

Start the water for your pasta and add the pasta. Cook until it is al dente. Drain.

Vegetable Pasta

At the same time, cook your veggies for your pasta. I like to do this by placing an inch of water in the bottom of a pan and adding in the vegetable noodles. Place the lid on the saucepan and steam for a few minutes until the noodles are softened but not soggy. With zucchini, I cook them just until they’ve reached a nice shade of bright green (about 3 minutes). Remove them from the stove and drain.

If you have picky eaters, you might want to try using a yellow squash instead of zucchini. Once cooked, it blends in better with your regular pasta noodles. As your family gets used to eating the vegetable noodles you can increase the amount of veggie noodles and decrease the amount of regular pasta.

Heat up your jar of pasta sauce on the stovetop. You can use store-bought if you have some or use home-canned for the best flavor.

Toss your veggies noodles with your regular noodles.

Mix the noodle mixture with the pasta sauce. Serve warm and enjoy!

Yum! You could sprinkle a bit of cheese on the top of your plate. You could also make this dish more hearty by adding a little bit of browned hamburger or sausage to the sauce when you are heating it on the stove.

  1. I love the idea of putting the zucchini noodles in with the pasta. Sounds delicious. I was surprised to see that you were mentioning Prego sauce so much…until I read that it was a sponsored post. I don’t use jar sauce often and have not tried Prego. But when I use it, we use Amy’s Organic Family Marinara (low-sodium; regular is way too salty). It is a smooth sauce that the kids prefer. Thanks for a great recipe!
