My Tried and True Banana Bread

I’ve been making this banana bread recipe for years. I think I may have even made a batch for the fair back when I was in 4-H and doing Bread Baking. I love making things with bananas. They are so inexpensive. I like to buy the overripe ones that are on clearance at the grocery store. I can usually pay less than $0.25 a pound if I get them that way. And in the winter when fruit deals are scarce it’s nice to have something yummy and healthy that you can get a deal on!

The Best Banana Bread Recipe

What you need:

  • 2 1/2 c. flour
  • 1 2/3 c. sugar
  • 1 1/4 t. baking powder
  • 1 1/4 t. baking soda
  • 1/2 t. salt
  • 2/3 c. butter
  • 2/3 c. milk
  • 2 mashed ripe bananas
  • 2 eggs

Mix together the flour, sugar, powder, soda, and salt.
In a separate bowl mix together the butter, bananas, eggs, and milk.
Mix both mixtures together. Is there anything more beautiful than this dough? It looks like ice cream!
Pour into a greased bread pan. Bake at 350F for about 50 minutes or until a toothpick comes out clean.

Instructions

  1. Mix together the flour, sugar, powder, soda, and salt.
  2. In a separate bowl mix together the butter, bananas, eggs, and milk.
  3. Pour into a greased bread pan. Bake at 350F for about 50 minutes or until a toothpick comes out clean.
  4. Make sure you let it cool in the pan a little while before you take it out otherwise parts of the sides or bottom might come off because they are too hot.

  1. This looks yummy! One tip I learned from my mom — You can freeze bananas to use in bread later. So, as we fail to eat a banana before it becomes overripe, I stick that banana in the freezer. Before I know it, I have enough for a batch of bread!

  2. I freeze bananas all the time! That’s why I don’t mind buying the overripe ones at the store because I just throw them in the freezer anyways:)

  3. Do you peel the bananas before freezing? Does it make a difference? I made the Pumkin Bread recipe you posted last week and it was fabulous. Thank you!

    1. I don’t actually. I just throw the whole banana in a large bag I keep in the freezer. I have heard of some people peeling them before though and keeping them in a bag. It works either way!

      1. Hi! Sorry to chime in so late, but just discovered your site (and am having a GREAT time poking around!!). I wanted to offer a third way of freezing bananas, that I’ve had great luck with. If they go black before I have the time/energy to bake, I mash them up as if I were about to bake, doing 2-3 at a time (whatever I would use in an average Banana Bread loaf). Then I put them, mashed, in a zip lock bag, labeling the bag with the date and contents. Then when I’m ready to bake I either toss them in the fridge the night before, or let thaw by filling a bowl w/hot tap water and dropping the bag in it, and change the water a couple times. Both are super easy and give me the bananas when I want them. Thought I’d share 😀

  4. This is perfect timing that you post this today! I just had a friend give me her “over ripe” bananas. She was actually getting ready to throw them in the trash!!! I brought them home, peeled them and tossed them in a ziploc bag. I’m going to be using your recipe to make banana bread to take to home fellowship on Thursday night. Thanks for sharing the recipe!

  6. Do you have a recipe to make hamburger buns without the bread machine? I don’t have one. Thanks! Just recently found your site and I really enjoy it. Though it is only my husband and I at home now, I do enjoy cooking for others and I’m learning to save money and time. I enjoy making different kinds of jelly and I hope to do some canning this year. Have you ever tried root beer or pink grapefruit jelly?

    1. These Burger Buns can be made without a bread machine. Instead of using a Dough cycle you will just need to knead them yourself or with a stand mixer before letting them rise. I haven’t yet made Root Beer or Pink Grapefruit Jelly, I’d like to though!

  7. Is this supposed to go into 1 loaf pan or 2? My pan seemed too full for one pan, but I searched your recipe and it said nothing about 2 pans. However, at about 15 minuted into cooking my pan started overflowing! I have a mess in my oven and have had to stop baking for fear of a fire. Just wondering? I guess I’ll have to use 2 pans next time or search for a much bigger loaf pan, though I’ve never had trouble with this pan in the past being too small for any of my banana bread recipes.

  10. This is a really good recipe for banana bread, or actually any type of fruit or vegetable bread, such as zucchini, which is next on my list. I must confess that I did cut back on the sugar to one cup, as I had a couple of overripe peaches that I wanted to use, and wanted to use some dried cranberries, too. Just threw the bananas and peaches in, mixed it all up, but before baking, I added a cup of coarsely chopped walnuts and pecans mixed, and about half a cup of dried cranberries for sweetness, (since I was using less sugar) and color. It turned out beautiful. Wish I had taken a picture, but it was gone before I thought about it. Just a note, I was glad that I cut back on the sugar, since I added the cranberries.
