Chocolate Chip Zucchini Cookie Bars

Ingredients

  • 2 cups shredded zucchini peeled or unpeeled
  • ½ cup coconut oil or butter melted
  • ½ cup honey
  • 1 egg slightly beaten
  • 3 ½ cups whole wheat flour
  • ½ teaspoon kosher or sea salt
  • 1 teaspoon baking soda
  • ½ cup sugar
  • ¾ cup chocolate chips
  • ½ - 1 cup unsweetened applesauce see note

Instructions

  1. Preheat oven to 350 degrees. Grease a 9x13 pan.
  2. In a medium bowl, combine the zucchini, butter/coconut oil, egg, and honey.
  3. In a large bowl, combine the flour, salt, baking soda, and sugar.
  4. Pour the wet ingredients into the large bowl with the flour mixture, stir to combine. Fold in the chocolate chips and add applesauce until a moist dough forms.
  5. Spread into the pan and bake for 20-25 minutes, or until the top turns golden brown. Remove and let cool, then cut into bars.

Recipe Notes

Note: The applesauce helps moisten the dough. The amount you use will depend on the weather, the moisture content of your flour and zucchini, and personal preference. I ended up using ½ cup, but sometimes I don’t need it at all.
