These little mini muffins taste just like the Banana Bread you know and love, but they are in a mini take-along treat size. Perfect for freezing for later or for grab and go snacks for the summer when it seems like we always have somewhere to be. Banana Bread Mini Muffins

These little muffins are great for freezing or taking on the go.

Ingredients

  • 1/4 cup Butter softened
  • 1/4 cup plain Yogurt
  • 1/2 cup Sugar
  • 1 Egg
  • 1 cup All-Purpose Flour Wheat Flour, or Gluten Free Flour
  • 1 Banana mashed
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda

Instructions

  1. In a large bowl, cream together the butter and yogurt, add in the sugar.
  2. Mix in the egg, flour, banana, baking powder, and baking soda. Mix well until all ingredients are combined and no lumps remain.
  3. Drop into a greased or lined mini muffin pan. Bake at 350 degrees for about 15 minutes or until the muffins are just brown on the bottoms. (You can do the toothpick test. Enjoy!

Recipe Notes

For something a little different, you can also add in 1/4 cup of mini chocolate chips to the batter before baking for a Chocolate Chip Banana Bread muffin. If you aren't taking these on the go, they are delicious topped with a bit of butter or cream cheese as well.
