Rice Crispy Oatmeal Cookies Recipe


  • 1 1/2 cups Flour I used Gluten Free Flour
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • Pinch of Salt
  • 1/3 cup Coconut Oil
  • 1/2 cup Brown Sugar
  • 1 Banana mashed
  • 1 cup Crispy Rice Cereal
  • 1/2 cup Old Fashioned Oats
  • 1 Egg


  1. In a large bowl, mix together all ingredients. Make sure there are no lumps of banana or coconut oil (I soften my coconut oil first to help it blend better).
  2. Drop by teaspoon full onto an ungreased cookie or bar pan (I recommend one with sides just in case the oil would drip).
  3. Bake at 350 degrees for about 6 minutes or until the cookies are just brown around the edges. (Yours may need to cook a little longer, my oven seems to cook these very quickly).
