How to make simple rice crispy cookies that the kids will love.
In a large bowl, mix together all ingredients. (You can use a stand or hand mixer if you prefer.) Make sure there are no lumps of banana or coconut oil (I soften my coconut oil first to help it blend better).
Drop by teaspoon full (or use a cookie scoop) onto an ungreased cookie or bar pan (I recommend one with sides just in case the oil would drip). Cover the baking sheet with parchment paper first. You don't want it to be greased but you also don't want the cookies to stick.
Cool the finished cookies on a wire rack so that they can firm up and get nice and crisp after baking.
