A very simple but delicious salsa made with avocados and corn.

Ingredients

  • 1 cup Corn fresh or cooked
  • 2 Avocados
  • 1 small Onion
  • 2 Limes
  • 2 medium Tomatoes
  • 1 1/2 cup Black Beans soaked/cooked
  • Garlic Salt

Instructions

  1. Start by chopping up the onion, avocados, and tomatoes and place them in a large bowl.
  2. If you are using fresh corn you will need to remove it from the cob. Add it to your bowl.
  3. Rinse your black beans and add them to the bowl. (You can use canned or freshly soaked black beans in this recipe, both need to be rinsed first)
  4. Squeeze the juice from the 2 limes and pour it over the top of the salsa.
  5. Sprinkle in a little garlic salt (we use about 1/2 teaspoon) until it's reached the perfect saltiness for your taste.

  6. Toss with a spoon lightly until everything is mixed together.

Recipe Notes

This recipe will make a fairly large batch that will serve at least 6. If you have extras you can just refrigerate it until you are ready to snack on it again. The flavors will mingle and get better after sitting for a while.
