1TablespoonItalian seasonor dried thyme, oregano and basil
Salt/Pepper to taste
2TablespoonsButtermelted
1/3cupParmesan cheesegrated
2TablespoonsChives or Parsleychopped (optional)
Instructions
Preheat oven to 400F.
On a baking pan, place the potatoes in a single layer and drizzle with the olive oil. Coat all the potatoes and the baking pan.
Season with salt and pepper and the Italian seasoning or dry herbs. Toss to coat all the potatoes.
Make sure they going into the oven in a single layer or they may stick together.
Bake for about 30 minutes or until they're golden brown. If you aren't sure that they are done, give them a little poke with a fork to test.
Remove from oven and stir in melted butter, toss with all the potatoes. Sprinkle the cheese and the chives or parsley and serve immediately. Yum!
Recipe Notes
This recipe is great for using those smaller little potatoes that you are bound to get with your home harvest but you can use larger potatoes too. Depending on the size, you will just have to quarter your potatoes or cut into 1" cubes.
